Side Dish and Dessert

like many people here I'm doing a green bean side dish.

all you need is thyme, green beans, olive oil, shallots, s & p.

carmelize shallots in olive oil while blanching green beans in another pot. After green beans and shallots are done, combine them in a pan with thyme and s&p. If you don't want to use 2 pots you can always fry the green beans in the pan with the shallots.

Another great variation is to add crumbled goat cheese on top of the green beans when they are done and still warm.

I love Julia Child's recipe for green beans..blanched for 7 minutes, then shocked. Pan dried. Sautee w/ butter and fresh parsley and s&p to taste. yum

For dessert, this one's outstanding -(I prefer to serve it at room temperature for a creamier filling):

Another great one is Cook's Illustrated's Dark Chocolate Mousse - can't post a link, because it's for members only, but I can PM the recipe to you if you're interested.

Two more good ones:

Itr sounds wonderful...and looks very professional. I don't know if there will be time to complete for tomorrow, but I will try my best. If not, Friday AM, sounds like a go.

If you have a blender, you can make Pierre Herme's Lemon Cream:

And fill it in a ready-made tart and top it with berries. It is delicious.

Thanks,

Looks as if the raspberry fool is a no brainer for tonight or early AM, and the "icebox cake" seems good to go as well. Just need some ingredients including the lady fingers.

Would be a great "light" dessert, but don't know if time will work work. We have pumpkin pie(s) on the list, so I will try this for the next holiday. Or maybe I could get one of the family members to give it a whirl tonight.

For dessert, you could also do something like this.  Although this calls for a crust, there would be no reason not to crumble gingersnaps on top.

I like the added cheese idea, it woud certainly give it a certainly unexpected texture.

If like me you prefer the savory preparations of

sweet potatoes, here's a really good and quick stovetop

recipe. They can be made with sweet potatoes or "yams"

(i.e. what they call yams in US grocery stores, not real yams).

heat 2 tsp butter or veg oil in skillet.

saute: 1 tbsp freshly grated ginger, 1/2 tsp (more or less

per taste) cayenne pepper, and 1/4 tsp or thereabouts cinnamon.

Add 2 sweet potatoes, peeled and cut into sticks

Saute and stir until done - if you play with the heat

you could even maybe get them a little blackened / caramelized

on the outside.

Add a few raisins at the final stages and

a little honey to coat the sweet potatoes....

Add salt to taste.

Serve hot of course.

I do the Raspberry Fool a little differently - I whip the cream until soft peaks form, gradually add the sugar, then whip to stiff peaks. I omit the extra 1 1/2 cups raspberries for layering or topping, but it sounds like it would be nice. Also, make sure you check the sugar - depending on how tart the raspberries are, you may want to add a little more, to taste. I chill it at least 3 hours.

Thanks,

what type of beans are you using. What other spices could be added besides the garlic? Thanks.

Haricots verts are very small and slender green beans ... and I sauteed the multicolored pepper strips in a little olive oil .. the garlic worked well so I am at a loss as to what other options I might use ...

So, this dish is essentially ready to be reheated for Thanksgiving dinner with a bit of olive oil, or butter if you prefer, on the stovetop and I'll add a few pignola nuts for contrast, as the recipe indicates ...
