Much of what is traditional in southern Ireland is also traditional in Northern Ireland. Look out for dulse (a type of seaweed) in cheese and crackers and also carrageen moss for making some traditional desserts. Potato farls are also a big thing in the north, but I don't know how well they'd travel.

And of course there is Bushmills malt whiskey.
