Scaling from an 8 inch to a 9 inch pan

I'm converting a recipe that was written for an 8 inch pan into a 9 inch pan. It seems to me that 125% of the original would be correct. Does that sound right to you guys?

Assuming that the depth of the mix in both pans is the same, then the surface area is the important variable:

surface area of 8" pan = pi x r x r = 64 x pi

surface area of 9' pan = 81 x pi

differential = 81/64 x 100 = 126.56, which is as near as makes no difference to 125%.

edited to add : I wonder if conversion tables are available for instances such as these? square to round pans, different sizes, depths, that sort of thing?

culinary bear,

The radius of an 8" pan is 4". The radius of an 9" pan is 4.5".

Thus,

surface area of 8" pan = πr² = 3.14 x 4 x 4 = 50.24

surface area of 9' pan = 3.14 x 4.5 x 4.5 = 63.58

differential = 63.58/50.24 x 100 = 1.26

Mind you, the differential is still close to 125%.

Therefore, to answer aidensnd's question: Yes, 125% seems correct.

It doesnt really matter, 100% or 200%. It's still being dstributed the same.
