Source for Mutton in DC?

Recommended Posts

Call Tim at Wagshall's. 202.363.0777 He hooked me up with the 50 pound pig for my Caja China orgy of porcine priapism. I imagine his barnyard contacts could easily procure other victims.

I dunno, ask either DCMark or Al Dente.

While I'm not sure, I would guess that DC Mark is looking for actual mutton as opposed to lamb. The meat of a grown sheep will have a stronger flavor and somewhat coarser texture than that of young lamb. There are some good long cooked recipes (as well as some old fashioned ones) that call for mutton.

All that being said, I don't have a ready source. I have had good luck at most grocery stores or butchers asking them to special order stuff for me.
