What is your own personal "signature dish"?

My most requested dish is peach upside down cake - made in an iron skillet; but what I most like to do for small dinner parties (fewer than five people) is a cheese fondue.

Hopelessly naff, que no?

I'm a canning clean freak because there's no sorry large enough to cover the, "Oops! I gave you botulism" regrets.
