It is our old locale, it is a temp store for 6 months then we will swap spots with the wedge in the winter.

our menu is going to be simple, tacos, burritos, quesdillas

homemade tortillas for the tacos, homemade guac and agi. 

simple simple simple, fresh fresh fresh, tasty tasty tasty

And please don't forget the most important ingredient ..... Pork! Chicken and beef are great but pork (butt) has to be a player in any great taqueria IMHO.

.....and when you say swap is the Flying Wedge's original location downsizing or disappearing?

We ordered something like 4 or 5 items (some tame, like pork torta, and some more adventurous, like tongue taco) and were really let down by the lack of flavour...

i find that salting to taste can be a saviour.

heh, in my less-than-voluminous experience with mexican tacos, i've always noticed that salt shakers are within reach--even at the taco stands i've been to in mexico. i've noticed that the meats and fillings are way less salty than maybe we're used to, being perhaps conditioned to Taco Bell et al... heck, i've seen the locals salt their tacos so it must be acceptable, no? :smile:

went by today and they definitely ain't open yet. looks very close though. give it a day or two.

Just got back ... as you said not open.

The big guy (can't remember his name) said they're expecting the inspector today, and should be open next week.

Had a good burger at Veras though. But the doorknobs working back there need some more practice. (Sorry Gerald.)

Ditto for canucklehead & I. Had to settle for lunch at Watermark. Not happy. Nothing horrible ... just not tacos.

Man, looks as it would have been a eG reunion there today.

Three of us went hungry for Tacos at lunchtime as well. Whomever we spoke to inside said they would be open Monday. :sad:

We almost settled for a Vera burger, but a quick call to Chillo saved the day as he was open so we headed over. Taco cravings well satisfied.

Tried Chillo's for dinner tonight - tongue, beef flank, chicken, chorizo tacos. Damned tasty! Salsas fresh and bright. Chillo and his wife Lupe were great - friendly and chatty. Lupe was under the impression that I spoke Spanish - God knows why. Everything from scratch - including the chorizo (which were the Mexcan style - spicy loose ground pork style - rather than cooked up like a sausage). Squeeze of lime to brighten things up. Good.

This morning I had a message from Gerald inviting us to come down for an informal tasting at his new Taco Shack on Cornwall. When my friend and I got there Gerald was just making his fresh Tortillas and putting them on the grill. Just looking at the ingredients in front of us we knew we were in for a treat. He had a bunch of Steak marinating, and then Noah got there with a bag full of items to make up some fresh Guacamole and Salsa. Shortly then after David (their new partner) arrived with the rest of the ingredients to make the Spanish Rice.

In very short order were three tacos per plate served on their homemade Tortillas with an very nice helping of Grilled Steak, Onion, Cilantro, and some Lime. This was the first time I have ever had a fresh tortilla and I have to agree with Gerald that it make a difference. They tasted fantastic; add that with some perfectly marinated grilled steak and the simple condiments..... well, it's hard to get any better than perfect. Best Taco's I have ever had, and I'm not just saying this because these are a group of great guys, which they are. You just have to try them.

Next we tried their Steak Burrito filled with David's secret recipe Spanish rice, homemade salsa and Guac. Another clear homerun! Then the Quesadilla with Steak and their cheese blend, which was just great as well. The philosophy they explained is to make everything fresh, right down to the Salsa's. These guys have really done their homework, and with David’s guidance from his years of working around and eating at Taco Trucks in L.A., the word that comes to mind when describing their menu is Genuine. Not just because of authenticity (whatever that is) but because these guys love Taco's and Mexican food and have put that clearly into their food.

For under $10 you will get a meal and a drink and leave with a big smile.

A big thanks to Gerald, Noah, and David for inviting us over for the sampling .... they stuffed us each with 7 Taco's, parts of a burrito and quesadilla, washed down with a Coke. I'm still smiling.

They are looking to open Tuesday or Wednesday.

Seems I'm having similar luck with Chillo's at lunch. 3 times been there at noon-ish, and 3 times not open.

What are their hours ... really ... as I was unable to read the sign on their door :wacko:

Best bet is to call before you go, his # is 604-301-0474. Last time I was there he mentioned his mid-week (Closed Monday, Tues - Thurs) hours to be 3pm to 11pm. Not sure if this still is valid so call him first.

Somehow, I think that Gerald (shy and retiring though he may be) will be the first to post announcing the opening!

If Chillos is going to remain a going concern they're going to have to decide on some consistant opening hours and days and then stick to them. I've forgiven them for not being open once when they said they would, I'll not forgive them a second time.

They are open. I had lunch there today. I'm going to reserve comment until I try it again (after they have been up and running a while longer), and they get the opening kinks out.

Had lunch at the new taco shack today and I believe I can say without reservation that Gerald, Noah and crew nailed it. For just under seven dollars you receive three tacos (any combination of beef, chicken or fish). The tacos speak of a genuine time, place and feel and are true to their taco truck routes: moist slow-cooked meats on homemade tortillas (one, not two, as their rendition is slightly thicker than what you might get in a taco truck), served with cilantro, lime, and your choice of sauce - roasted tomato based or tomatilla based, as well as optional pico de gallo. The fish is served with cabbage and a nice creme based sauce that has a nice smoky kick. Kicks taco del mar's ass, as well.

To me, a large part of authenticity is respect for the ingredient and means of production. In this sense of the word, the taco shack is right on. These guys obviously know and care about the roots of what they are doing, and it is evident in the product. And don't worry Ling, it tastes good, too.

Jeeezuz! :blink: Why'd you have to go drag Taco del Mar into the conversation? This is like saying Holt-Renfrew kick's Walmart's ass in clothing. I've had more than my fair share of burritos at TDM since my kids have developed a liking for them (totally their mom's fault!). I know whereof I speak. TDM is crap. I won't insult Daved, Noah and Gerald by making the comparison.

I'm with Vancouver on this. Reserving judgement after my lunch today. I really liked what I had ... and I'm pretty sure they're the best I've had in BC. But as we've established, that's not saying too much.

A couple early notes however:

* I agree with eatvancouver ... sauce for the fish tacos is really good.

* I thought the fish in fish tacos was supposed to be battered and deep fried. The Yet-To-Be-Named-Taco-Place-On-Cornwal doesn't do it that way. It was good ... but I thought we were going for "authentic". Or maybe this gringo has it wrong?

There are some forums where this much yet to be deserved exuberance would be labeled... Plant!!

I tried a quesadilla and while it was tasty it had too much orange cheddar melted in it to be particularly authentic.

I agree about the fish taco needing to be deep fried to be authentic but I bet there are a lot of people who will prefer them the way they are.

Still, this is going to be a great addition to Kits Point once they iron out the details.....and add carnitas!!

With a scorcher of a weekend on the way and fireworks Wednesday after that the learning curve is gonna be steep!

Has anyone ever had a single tortilla taco before? I'm racking my brain to try to remember if I've ever seen that, either in the States or Mexico. I'm not certain I have, maybe my sample size just isn't large enough.

On the KT, what do you mean by "single tortilla" taco? Most tacos in Mexico are served with single tortillas (but usually three of them) and you divide the filling(s) for each taco serving.

I think it's an appropriate comparison simply because TDM one of the few places in Vancouver that sells a fish taco. i think go fish might have one as well, but i haven't tried it.
