We just got back from a brief camping trip where we did all of our cooking over the campfire.

This was breakfast - thick slices of homemade applewood-smoked bacon, eggs cooked sunny-side-up in the drippings (of course), and tin-pan-oven baked biscuits:

Wild mushroom and feta cheese omelette, roasted Austrian fingerling potatoes, heirloom tomatoes

For the filling: Mushrooms (I used shiitake and oyster mushrooms) sauteed in unsalted butter, minced garlic, salt and pepper, thyme. Deglaze pan with white wine. This was combined with some feta cheese.

Some lovely breakfasts, everyone! Leftovers in omelets (a popular idea, it seems) is genius!

Shelby - what's German breakfast sausage like? And where do you get it. Fantastic looking hashbrowns, BTW!

Rachel - that grilled cheese breakfast sounds exactly like what a weekend breakfast should be!

Bruce - more lovely rice <sigh>!

RAHiggins - Wow. That vegetable frittata is a thing of beauty!

Soba - your little potatoes and omelet look lovely - and I don't even like mushrooms :raz: !

No pictures, but this morning I had a couple of boiled eggs and two shaggy mane mushrooms which popped up in the side yard amongst the tomatoes, mushrooms sauteed gently in butter and olive oil.

No pictures but a popular school break sandwich, at 9:45, or breakfast, is an omelette in a pita or half baguette with humous and tomato. Best when hot, of course, but the kids take them to school and eat cold. The kiosks also sell them with french fries added-delicious!

Nothing fancy - fried up three different pancettas to compare cures, taste, and quality, and enjoyed a small piece of Semifreddi seeded sourdough baguette as a palate cleasnser.

Percyn – that corned beef is gorgeous! What did you do with it? I’d love to see a slice.

Ilana – that omelet sandwich sounds great. I often do similar things with leftovers from weekend breakfasts for quick weekday breakfasts. You’re right, they are better hot, but not bad at all room temperature.

Well, I’ve hardly cooked a thing since Mr. Kim had his surgery, but I did make breakfast this morning. Eggs Benedict with biscuits and Benton’s bacon instead of English muffins and Canadian bacon. Also hash browns:

Mr. Kim is doing much better, but feeling worse in some ways – itchy, sore, reactivating nerves, less narcotics. So he’s better, but tired, bored, and miserable. And as Mr. I’ll Handle It, he feels guilty and weird having to accept help.

Ilana and Percyn - Thanks for the good wishes, I'll pass them on. He's just been amazed at all the eGulleteers that have sent wishes for his recovery! He's doing very well considering that he had major surgery just a couple of weeks ago. He's up and around and all the results of the tests have been good. I haven't been cooking much since then, but I did manage breakfast yesterday. We had Cheddar-chive scrambled eggs (with that lovely bacon salt you recommended, Percyn :wub: ), Benton's bacon, fruit and chocolate croissants from Trader Joe's (we are very, very happy to have a Whole Food and a Trader Joe's open near us in the last month!):

Percyn - Mr. Kim would lose his mind over that corned beef hash! It is his absolute favorite breakfast and what he always orders. Usually it's just ok, but occasionally at a really good brunch, we'll get a good one, but never as lovely as yours! And with a perfect poached egg on top!

Corned beef hash is one of my favorites as well and other than 1 local breakfast place I am always disappointed by the canned stuff they serve at diners/restaurants. Thus, I decided to make my own and now I am not sure I can eat the canned stuff.

I would be happy to share some with you in exchange for that Benton's bacon :biggrin:
