Peanuts ==> Peanut Butter

My local Big Lots has jars and jars of Planter's Dry Roasted Peanuts in stock. I cracked one open (after buying it :biggrin: ) and the nuts tasted pretty fresh. Does anyone have any tips, tricks, etc. about turning them into peanut butter? I have a blender (Krups) and two food processors (Braun and KA) but no Vita-Mix or anything like that. Thanks in advance.

Rachel is indeed correct. You can add a tablespoon of peanut oil to help smooth things out if you wish (to about 2 cups of nuts). A sprinkle of sugar and/or salt helps heighten the flavours as well.

Better yet, is cashew butter.

I have one vital question for you.

Crunchy or creamy?

Crunchy, as Rachel said, works great in the food processor.

Creamy is an iffy proposal. Food processors won't give you creamy, at least not Skippy creaminess.

The blender might work, if you add a pretty hefty dose of oil and use both warm oil and warm peanuts. I wouldn't bet on it though.

I've never made peanut butter, but I made toasted pumpkin seed butter in the blender. You'll need to add peanut oil, just a drizzle through the lid til you have enough for the nut paste to churn. After a week or two, excess oil will float back to the top and you can pour it off and reuse.

If you're adding corn syrup, then you're not interested in natural style. To better simulate Jif, warm the whole thing and add melted crisco to keep it from settling. (ick!)

But for really good, fresh-tasting peanut butter, buy bulk raw nuts and roast them in the oven. Planters peanuts in the jar are only borderline fresh.
