Spit Roasted Pork

Marlene

Recommended Posts

I'm entertaining yet again this weekend, and because it's nice, we'll likely spit roast our pork roast instead of roasting it in the oven. I'm looking for a nice sauce to go with it, that can be made ahead of time and not fussed with too much at dinner. I'll like also serve a Potato Puff and a Tomato/Onion salad with a balsamic vinigrette dressing.

Ideas?

There was a previous thread on a sauce that went well with pork tenderloin:

Clickety

I haven't tried it but they seemed to like it.

Edited to add there was another similar thread here.

What comes to mind is a nice juice to drizzle over the slices before serving...

A kinda Greek thing...

A liquid made with roast drippings, olive oil, oregano, fresh ground black pepper, lemon and minced garlic...

That's livin' baby!

Since we'll be spit roasting, I'm not sure what the drippings will be like. I could make a warm mustard sauce, but since I'm serving French Onion Soup first, I'd rather not have to get up and make a sauce.
