The May issue of GOT RUM? Magazine put out by Luis Ayala has a lot of cool information and recipes for mexican rum drinks, food and drink recipes with Piloncillo (a type of unrefined brick sugar that is common in Mexico), as well as some interesting history of the spirit in that country.
