Jin - Agreed - A TRUE legend, an empire, a benchmark.

It appears it was from the release of her and St. Pepin's book. (About a year ago?) Must get the book.

Julia Childs is visiting Emeril Live today. Don't know if you all get Food Network at the same time or if there is a FN East and FN West like some of the other networks do. She still is a lovely lady and seems to be enjoying herself.

I happened to catch that tonight...

She is a lovely lady... You could hear the sound of her breathing though... it's sounding pretty heavy/wheezy. :sad: I feel about as rotton as I did as a kid when I realized my grandparents weren't going to be around forever.

I was happy to see him treating her with such respect, though. Not that I've ever seen him treat someone with disrespect (food network is relatively new for me), but you know what I mean (I hope).

I'm wondering who ate the burger she made - he gave her that huge plate of rabbit and then they go on to make these tasty looking super stacked burgers... I'm waiting for dough to rise for pizza tonight and now I'm craving burgers. :blink:

Julia: "I think people are kind of naughty about no fat these days" :laugh:

I caught the show also, and it was very sweet. I saw Julia make the same burger on her tv special with Jacques Pepin. I laughed so hard when she says she likes a thin burger because otherwise it's too big for her to chew and then she loads hers up like the Empire State Building...gotta love her!

As to Julia's comment on fat, I thought she said the low fat people were nutty (not naughty).... (I may have misheard)... Julia looked like she was having fun, and like the hokey pokey...that's what it's all about.... :smile:

:laugh: I'd forgotten that part...all I could think about is 'wow, Hubby would be ALL over that burger faster than you can say "drool"'

The only thing he put on her burger was cheese. She asked him if the salsa was hot, he taste tested it and said "that's outta here" and off it went.

ETA - completely pedantic, but, she just said "no, I don't like that" vs. "I don't like that stuff." The second sounds like a jab at Emeril and "I don't like your product" vs. perhaps she just doesn't like spicy things on her burgers.

I caught about 10 minutes of it and it looked like Emeril was actually kind of annoyed by the crowd's usual butter and garlic orgasms. I think he was a little embarassed.

btw, anyone see Emeril's Crest commercial where he wakes up the neighborhood with a "BAM". Not as funny as the Amazon or B&N commercial he did (what was that commercial?), but not bad. And you can't blame him for being a hypocrite. He's never hid his commercialism.

Saw that one last night. She's still a very interesting person.

But it was on one of her shows that I first saw Emrul. He in his white jacket and full sized touque in what looked like someone's back yard. Might have been his. He was head chef at Commander's Palace at the time. Did a big ol' crawfish boil, and he and Julia stood over the pot and sucked the heads. (That sounds so wrong. I'll leave it alone)

She did Larry King's show a few months back right around her birthday. I remember her saying she didn't like cilantro, and the thing she orders if she is uncertain about the food is a baked potato. "Even a hospital couldn't screw up a baked potato"

Screw it. It's a Butterball.

i first met emeril when he had just been named head chef at commander's. you wouldn't believe it now. he was the quietest little chef-nerd you ever saw. he walked around with his shoulders hunched over staring at his shoes. when he shook hands, he'd only glance at y ou like he was afraid to offend. and now, oy vey.

not to overly namedrop (well, ok, that's what i do), but i was with julia when she was on larry king the last time, watching it in the green room with her assistant. here's an interesting thing i've noticed, kind of a julia drinking game: when she is getting really bored or irritated with an interviewer, she'll start answering his questions with questions (the worst thing an interviewee can do, of course). Once you've noticed, it's very funny to watch.

You know that scene in The Breakfast Club where Ally Sheedy makes it "snow" on her drawing. Well, whenever Emeril leans forward and you see his dome, that's when he's adding his essence. (Only slightly less nauseating than the sexual double-entendres accentuated by the word "BAM" to end every phrase that came to mind.)

When Emeril moved up at Commander's he was filling some pretty big shoes (both literally and figuratively :biggrin: ) in Paul Prudhomme's, who at the same time had moved down to Chartres street and was starting the Louisiana Food revival (or whatever you call what happened) at K Paul's.

Emeril had to do at least as well as Paul to keep his job in the short term and he had to make the place way more interesting if he wanted to keep his job in the long term. Working for Ella Brennan is not easy. She is a very demanding woman and knows more about the restaurant business than most of us will ever hope to know. If you don't have the chops you will not be employed very long. She is also very interested in seeing her own people do well. It is very likely that Ella helped both Paul Prudhomme and Emeril Legasse out financially (that has been the rumor around town for years, and I believe it) when they were starting their own places and would have likely helped out Jamie Shannon had he ever chosen to leave Commander's. Sadly, he never got the chance, due to his untimely death.

I have known Emeril since he was at Commander's and got to know him reasonably well right after he started Emeril's (in a vendor/owner relationship) and always found him to be a reasonably unassuming guy, nothing like his current TV persona. His staff thought the world of him and have followed him from place to place, as he has moved alot of New Orleans guys around the country to run his ventures (the guy running the Orlando location was a dishwasher at Commander's when he was in high school). I have a number of friends that consider him a friend and say that he is nothing like his bigger than life TV self. I'll take their word for it.

Just for the record I can't watch more than about 5 minutes of Emeril live. Not because of him, but because of his audience, who seem as if they might be warming up for the next taping of Jerry Springer.

I'll tell you something about Julia.

Even when teamed with Emeril, (and it was a repeat of a 2001 show), she can carry a whole Thread on eGullet without anybody posting sarcastic or demeaning comments.

That says a lot about the respect she has from the food community.

i remember seeing that awhile ago too-emeril was so shy and quiet and in awe and very respectful towards julia.
