Is this one of David Cavaliers menus from one of Charlton House Catering Services outlets (no idea which one)?

Embassy London, based on the fact that Gary Hollihead was joint head chef with David Cavalier at L'Escargot in the Nineties and therefore if he not cavalier he must be Hollihead.

Starter : Pressed skate, potato and leek terrine, with oyster and leek emulsion

Main Course : Roe deer with tea and spices

Dessert : Hot fig tart with a honey spice bread ice cream

Saddle of Venison, Port and Brandy Sauce, and Red Cabbage.

Pear Gratin with Nuts & Chocolate.

Sadly, no velouté, but then this is yesteryear.
