favorite aemono?

aemono are salad type dishes normally dressed ina thick type of dressing often made with:

sesame seeds (ground)

miso

tofu

egg yolks

I do these as nihaizu with vinegar, shoyu, dashi, ground sesame, and with either miso or tofu (though I will do miso on tofu). You can also do sambaizu by adding sugar or mirin.

Asparagus, ramps, mushrooms. Rarely fish.

Oh, yes. Garlic chives and Chinese long beans.

It has been 3 years since anyone added to this thread! :biggrin:

I made a really nice aemono with cucumbers and daikon with a peanut-rayu (chile oil) dressing. From the May 2006 3 pun Cooking magazine.

I made a shirae the other night. I had picked up a pack of carrot tops and was unsure what to actually do with them so I added them to a shirae with blanched julienne carrot. It was really good and everyone really liked it.

I have a question about goma-ae, and this seems like as good a place as any to put it! I'm sure this comes up a lot, but: I don't have a suribachi, and my mortar and pestle is very small, since I bought it only for small quantities of spices. What's the best way for me to make goma-ae? Food processor? Coffee grinder? Thanks!

I have a question: Which of your food processor and coffer grinder resembles my Milser more?

I do have a suribachi and a surikogi, but I rarely use them to grind sesame seeds because that is tiresome and time-consuming.

That looks closer to my coffee grinder. Thank you! I'll try it with that.
