Every source I have seen, and I've seen a lot, agree that chitterlings are small intestines.

Anyone who has seen and eaten chitterlings and large intestines would agree, they look very different.

They are just a version of the braised large intestines I mentioned at the end of my post (with a picture). They don't use soy sauce but otherwise the same.

Unfortunately, I am unable to reach that site but that is an incomplete quote and so, unclear what they are saying, although it sees likely they are agreeing that something else is not chitterlings, but something else from the large intestine.

That merely shows that Serious Eats takes its cue from the USDA. Every other source I have seen, and I've seen a lot, some extremely respected, disagrees. SE is often unreliable.
