So I made him a hot chicken sandwich topped with leftover dressing, sliced chicken breast and drenched in gravy.
He called it "incredible". Love feeding Moe.

Thanksgiving breakfast while watching the parade and the dog show was a  biscuits, gravy, sausage and eggs casserole.  Cut up whomp biscuits:

Jessica was entrusted with making my MIL’s wonderful yeast rolls for the family Thanksgiving dinner this year.  She did a wonderful job and with a few minutes of Bake/Steam in the CSO this morning they made a good breakfast.

Simplified beef with broccoli. Frozen commercial burger, patty cooked in air fryer along with some steamed broccoli, butter and soy sauce.  Quite tasty.

Wild blueberries and coffee on the side.

Bacon sandwich and some raw venison in the style of a tartare.

 

Avoiding carbs so I used granny Smith apple slices for toast or crackers.

 

Had a stub of round left after cutting jerky with my son. Should have added the egg yolk. I plain forgot

Pimentón Fried Eggs  with black-eyed peas, sautéed spinach and grape tomatoes

The egg recipe, from Canal House Cooking Volume No. 5: The Good Life,  suggests an optional addition of vinegar or lemon juice to the pimentón olive oil the eggs are fried and basted with.  This is not optional.  It turns the oil into a warm, smoky vinaigrette that improved everything on that plate.

I am always amazed at the range of dishes seen here. If given the chance, my wife will always eat bacon, scrambled eggs with cheese, and toast buttered before going under the broiler and being browned on one side only. She really isn't picky, just satisfied with what she knows.

A couple of recent breakfasts.

Breakfast sandwich of egg with herbs, tomato, gravlax and arugula. I made a batch of gravlax for the upcoming holidays and after slicing the scraps are utilized where appearance is unimportant. Wild blueberries with yogurt and coffee.

Yesterday:

Scrambled eggs and biscuits leftover from a Popeyes dinner we had a couple of nights ago. 

 

I screwed up doing the weekly hard cooked eggs in the IP and ended up with the most lovely, tender textured eggs:

I put the lid on without the sealing ring in.  It never sealed, of course, and the water just boiled away.  I don’t even know how long it was heating – I forgot all about it and when I walked through the kitchen, I noticed an odd smell and saw that the readout said, “burn”.  I will, of course, never be able to repeat this on purpose 😄 (and wouldn't try).  

 

This morning:

on low pressure  ib a basket above the 1 cup used 

 

for pressure steaming

in the early iPot 

 

history.

 

you take the basket out, 

 

after it time in the iPot

 

then chill it in cold water

 

then work w those eggs later .

This looks so very good so of course I have to follow the links and check out the recipes. It’s been ages since I even thought about Mandy! But now I have to ask you what you what thought of the scrambled eggs with starch, and if you have any opinion of the Simply Genius Food 52 book. I don’t want to take this off topic so I will repeat my question about the book in one of the book topics. Thanks.

Grilled ham and cheese done in the air fryer. Will revert to the stove top. The air fryer dries out the bread too much in my opinion.

Cocoa almond oatmeal from Food52 Simple Genius.  A bowl of brown oatmeal doesn't really appeal to me so I planned to skip this recipe but a chilly morning put me in the mood for either hot cocoa or oatmeal.  Why not?

Part of the "genius" of this recipe is the use of a small non-stick skillet to cook the oatmeal - it supposedly cooks more quickly and cleans up more easily than a saucepan.  Well, you really need to stir well to mix in the cocoa and it was too easy to slosh over the sides so not that "genius" to me.  There's no sugar, which appealed to me as I don't like sweet oatmeal, but the resulting flavor was that of unsweetened cocoa.  I added the requisite swirl of almond butter but it still looks like a bowl of poop so not terribly appetizing.  I tried adding some diced, crystalized ginger and that  was a nice touch but not enough to make me want to try it again.
