You don't have to wait or re-freeze. The respin button is primarily designed to mix in solid chunks after the churned texture is achieved. There is some lighter blending action but since it isn't the same intensity it can't be used on the solid frozen product. You can press it right after spinning. I suspect that its function in making things creamier is primarily by warming up the ice cream

I don't think these machines are made with that in mind.  Isn't the allure that you can freshly "spin" a few portions at a time and use recipes that don't rely on the usual fat-sugar-solids ratios of traditional ice cream to stay soft?

Today I spun the cheery pie filling sorbet.  Came out very nice on one spin of the sorbet setting.  It's back in the freezer so we'll see what the scoopability is after refreezing. I left this one in the container too.

This is exactly how I've understood them and seen them used in restaurant kitchens.

Except with a PacoJet you can pacotize  a few portions at a time.  Correct me if I am mistaken, but with the Ninja one must spin the entire beaker in one shot.

Yes, but I want that AND the ability to have it last for longer than just the one serving day.

Actually it will.  The manual actually says that if you eat some of the ice cream and freeze the leftovers, you can just rerun the original cycle if it froze too hard.  I did exactly that tonight.  Came out fine.

You seem to be able to.  The manual actually says that if you eat some of the ice cream and freeze the leftovers, you can just rerun the original cycle if it froze too hard.  I did exactly that tonight.  Came out fine.

I plan to start w canned Pears.

 

they end up riper than peaches in the can

 

as pears ripen off the tree

 

Pears ( no added sugar , maybe pear juice )

 

a little G.Marnier  or TiaMaria , or Creme-d-menthe  etc

 

looking forward to it.

 

if you watch a few YouTube vids

 

( if you can stand the 'ads'  which are insipid )

 

its noisy.  and listening to the pitch of the motor

 

very high pitched , I doubt the motor will last ' forever '

 

I hoping one Creation a day , and 1/2 of that back in the freezer

 

for further Creation the next day

Sorry, you are right. I meant that you cannot spin only a portion of the container, like the Pacojet which will let you spin 1/4th of it at a time etc.
