Dinner 2021

It's not earthshattering but my dinner didn't post.  It was a difficult evening after half setting up my new Ninja Creami.

I am not a Communist.  I have too great a love for kitchen toys.  Nonetheless something may be said for FDR's Social Security.  I was adopted at birth and orphaned again at 10.  Social Security saved me.  Now, in senectitude most of my income again comes from Social Security.

Recently I had a blood test.  The charge was more than $700.  My cost was about $50.  I still remember a Communist doctor laughing:  "This is a Communist country, no one pays for healthcare.

Dinner was salami, cheese, and crackers.  A liter of MR.  Overproof rum is one thing.  MR is another.  Unlike the leaking apartment ceiling downstairs, I seem to be plastered.

Another recent supper. Stir fried potatoes with pickled mustard stem. Also rice wine, a touch of soy sauce, garlic, a touch of sugar.

Steamed eggs with scallions, soy sauce, sesame oil.

Squash with oyster sauce, garlic, ginger.

Stir fry with chicken, ginger, garlic, bok choy, carrots, cauliflower, broccolini, summer squash, scallions and cilantro.  Basically a dinner to use up some of the bibs and bobs in the fridge before the next CSA box comes tomorrow.

I made carnitas from a package (Del Real brand from Costco) and it was pretty good - pan fried it.  Refried beans from a can, but the star was the "Mexican" rice. I started with frozen, vacuum sealed leftover rice, heated with part of a can of diced tomatoes with Hatch chilies, some tomato paste, water, sugar, garlic and cumin.  Very nice!

Tacos filled with sautéed corn, tomatoes, poblanos, summer squash, cilantro, and monterey jack cheese melted with more chiles and cilantro.  It was tasty but I should have made some beans to go with it.  We were all still a little hungry after dinner.  😃

Just skinned and portioned two sides of steelhead trout.   The tails and bellies are heading to the smoker today.  The rest was portioned, vac sealed and went into to the freezer.

Thanks! Followed this: https://whattocooktoday.com/super-easy-mini-cheddar-mochi-bread.html with the addition of toasted sesame.

It was a bit on the dry side. I'd suggest adding 10-15 g more milk. However, it is already quite sticky, so I'd suggest using a muffin tin it you do.

Make sure to mix it really well to develop the elasticity.

Have never had wild turkey. How does it differ from domestic turkey? The burgers look fabulous!

I'm assuming you started with live fish. Did you catch them? I rank steel head lower than arctic char and above most salmon as our favorite salmonoid fishes. Char was hard to get but Iceland is now farming it. It's much more available but still pricey.

Thursday nights may be our 2nd favorite night to go out for dinner; Tuesdays being our favorite.

It was gonna be windy and pour Thursday night, which meant the whole outside setup wasn't happening, so we went early to make sure and get seats without waiting. It worked.

White prawns a la plancha. Lots of bread to soak up the delicious juices.  Green bean salad gifted from the kitchen.

Significant Eater had the fried black bass, that prep not often found here, and it was stellar.

My half chicken. Half of the half made it home, the fries didn't cuz they're just too good. Chocolate tarta for dessert.

Started with cocktails, drank this weird one with dinner...

Greenmarket Long Island scallops over yellow grits with fresh corn (and possibly a lot of butter). Hastily chopped herbs.
