Dinner 2021

@Kim ShookThe dressing was just the usual--mayo, bit of sour cream, lots of fresh dill, splash of cider vinegar, bit of sugar, salt and pepper.  I need to quit eating cucumbers so I can start some pickles, but they are so good it's hard to stop.

@TropicalseniorYour meal sounds divine.  The liberkaese looks very good. And Basque cheesecake!

We dug up the russet potatoes recently--yes we are trying to cut back on eating them, but oh it's hard.  I've never had better fries than these.  So creamy on the inside, perfectly crunchy on the outside.

Sandwiches too...but the fries were the star attraction.

First sweet corn from the garden.  This is silver queen.  I like the nirvana better, but I threw a few SQ seeds in this year too.

My first ever cottage pie made with venison.  Very filling.

Pork enchiladas last night

Your can source easily fresh wasabi root? Nice fish selection.

"Soup of the evening, so rich, so green, soup of the evening, beautiful soup..."

Purge the veg compartment '> zucchini, cauliflower, bok choy, romaine + onion, garlic, chicken broth => Bamix blender -> plated with mound of Mexican sour cream, crisp guanciale shards, chives = satisfying, even poetically evocative.

As long as you don't mind sharing a bunk bed with your new sister....and hopefully you don't mind the top! :P

Yes - the Japanese fish monger that I get all my (to be consumed raw) fish from has it fairly regularly (I cannot get too adventurous due to the 'slowly' evolving palates of my kiddies - but they have some really cool and unique varieties of fish, will ask if I can take pics next time I am in store!).

Ink I saved from cleaning cuttlefish.

Steamed roe with pork mince.

Mushrooms

A tiny, almost weightless nest fell down in front of me whilst walking in the woods. It was a very windy day.

And these feathers were also found in the woods on the same day.

Saw the image before the caption and expected seaweed noodles. Nests are beautiful creations that do not always work out, but they usually try again :)

Can you share more about the mushroom dish?  Looks very interesting!

I also opted for the “Brinner” route haha, did a Croque Madame with some of the leftover truffle from the lamb I made. There’s something about the combination of bechamel, cheese, egg and bacon that just works. Also Norm that smoked pork looks absolutely delicious

@Margaret Pilgrim – as much as I love English muffins, I know I’d adore that potatoes version of a Benedict!

@Shelby – thanks re: the cucumber dressing.  I’ve made note and will try it soon.  They just look so refreshing when you show them.  Those fries look like a life goal to me, and I’d give an awful lot to have access to Silver Queen corn.  We had almost nothing but that growing up because we went to Chincoteague Island VA every weekend and bought all of our corn at MD stands as we passed through the state.

Dinner the other night at a new Mexican place around the corner.   Mr. Kim had is usual Mexican restaurant litmus test – Enchiladas Supreme – beef, chicken, bean, cheese:

IMG_6614.jpg.dc15431a3077065d2b5a9147a8d195c0.jpg

He was happy with them.  I got a chicken tamal and a beef burrito:

Everything was fine – the sauce was very good.  I’m no tamale expert, but the masa layer seemed a little too thick:

Last night was soup made from the braised (IP) beef and noodles I made the other day, purchased slaw, and a rustic baguette from Lidl:

Now that deserves a bit more explanation …

Sautee a diced shallot in the pan that the pork was cooked in, deglaze with dark rum (I used Pusser's), add stock, reduce, add cream (half the amount of cream to the amount of  stock),  boil, reduce, finish with black pepper and a grating of nutmeg.

So Covid hard lockdown has been extended for another week...  It's affected my wife dramatically.

She went hunting and found our over 25year old bread machine.  She cleaned it down and made bread... 😲

It worked perfectly.  She then requested I do some Savoury mince to go with it.

I must add that the only domestic quality my wife has, is that she lives in a house..

Our summer squash, zucchini, watermelon radish, the last of our garlic scapes, peeled and cored granny smith apple tossed with herb de provence and EVOO nearly ready for the Napoleon.

Boneless, skinless chicken breast seasoned with Badia rotisserie seasoning:

The watermelon radish is very hot eaten raw. Cooked it turned sweet with a bit of heat in the finish..
