I often pick up Cantonese BBQ duck when we are in the city. Half is consumed the same day and the other half into the freezer.

Easy meal last night: Reheated duck and some into fried rice. I cut up some of the extra skin, crisped it up and put it on the fried rice. I LIKED that!

Shanghai bak choy seems to be the best choice right now. I have tried the big bok choy, the baby bak choy, and the mini, and they've all been tough.

Okonomiyaki. I really love this dish, could eat it every week. I make mine on the healthy side, full of stir fried vegetables, bean sprouts, eggs, etc., and a bit of smoked paprika works well to highlight the grilled flavor.

Ramen. Based on the old Kenji's vegan ramen recipe, but much simplified. TL;DR it's a stock of charred vegetables, dark fried garlic, sesame pate, miso, soy.

Added some frozen tofu, stir fried cabbage, (overly) runny eggs, mushrooms.

Last night I slept poorly.  I made it through my evening shift at work, but I was fading fast.  Dinner was half a pound of Rancho Gordo Rio Zapa beans, a bag of tortilla chips, a pint of sour cream, and a jar of Green Mountain Gringo salsa.

 

There was nothing I'd have liked better.  Except maybe sex.

Made the filling for Steak and Kidney pie in the Ninja Foodie: 2 BIG bone-in beef short ribs plus a strip loin steak, a beef kidney, trimmed and soaked in milk and salt, diced onion, carrot, and celery. Topped and baked with store-bought puff pastry

Green Giant peas and Cavendish garlic and rosemary tater wedges from the freezer completed the plate. We like chunky salsa with this dish.

We are trying to reduce the content of the freezer. I picked up some salmon, shrimps and what I thought was stewing beef …

 

Turned out to be slices of beef shoulder that I purchased for making Döner. Difficult to think of anything to do with those.
 

Enter the little one, requesting noodles - with the shrimps, Pad Thai came to mind. Salmon turned into Thai-ish fish cakes and for the odd beef cut after some perusing I dug out the recipe of “Heavenly Beef” from David Thompsons Thai Food.

Nobody could agree on dinner last night.  Husband wanted chicken parmesan, niece wanted curry.  So...chicken parmesean

Late to posting, but here's our big meal from Thursday, we chose to do this for dinner since we had only 1 guest.  (Normally it's ~18)

 

As I posted in Lunch - we had an entire duck to do stuff with.  2 of the ways I made it were for dinner:

This is what my wife made for dessert, it's got apples in it, a cake layer, white chocolate mouse and caramel too.

 

Too much cake for me... but my wife and her mother and both liked it.

Lamb stew with kabocha squash, potatoes, carrots, chick peas, raisins, tomatoes in a mixture of coconut milk and lamb stock. Cardamom, fennel seeds, cumin, coriander, bay leafs and star anise as seasoning and finished with fresh mint, pomegranate seeds and a gremolata of almonds, parsley and orange zest.
