I lived in Vancouver back in the 80s, mostly on the east side (Commercial Dr area), and my sister still lives there. Lots of good memories.

Jeez I'm not even this sophisticated! I just love food and google any number of different recipes I can find. I'll definitely look into this though. Thank you!

Check out his website.  He has done a number of PBS cooking shows...Mexico One Plate At A Time comes to mind.
