had a Toasting White .  it had good crumb and was thicker than the average commercial bread.

 

some time after getting a CSO  ( ++ )

 

I looked for that bread , but it had been discontinued

Per Kerry, I used Combi @ 390.

Times are: 4 minutes  6 minutes 8 minutes

I took a bite of each after the 8 minute mark. 

Not much of a tender interior. 
I could accept them with butter. 
 

Some steam each time I opened the door. 
I used the top rack. 

 

Our goat loves bread.  He’ll be in heaven with the Wonder Bread.

Moar Science!

 

I used the CSO on toast setting 3 on the middle rack. I would have pulled them sooner if making my morning toast, but let them go the full cycle. 
the bottoms were partially browned unlike the FB. 

My lesson is watch closely and pull once toast is to your liking. 
I still think the FB won’t shine at toast or tea. 
 

I’m willing to do more Science as needed.

Just tried my pizza steel and it is too long one way and too short the other.

If I keep the FB, will probably get a steel sized to fit the oven.

I say steel, but have been reading that Aluminum may be the new wonder metal.

I remember eating their raisin bread.  That was tasty stuff.

CSO accomplishes this by keeping the fresh breads steam in the sealed CSO box ,

 

so the bread does not dry out under the heat , but browns nicely.

 

What's so good about CSO toast? What's the "ideal" for toast? I'm assuming that ideal toast is not melba toast / biscotti-like toast. Is it like @rotuts is describing, crusty surface(s) and soft (semi-moist) interior? TIA.

Maybe it depends on what breads you are starting with.  All I bake are French lean breads.  CSO toast is quite OK, nothing I would write home about.

Another test

Top rack, 420, Convi for 6 minutes with

 Wonder bread. 
I checked at 4 minutes and flipped the bread. 
I think this would be acceptable.

I did see that there's a panasonic microwave / convection / steam oven on Amazon.ca. Have you happened to use one of these? I did notice that 'broil' mode was only 1200W, which isn't as powerful as some toaster ovens, but it might not be as relevant as I'd think.

 

There's also a Sharp appliance, which tbh looks really cool, but it seems tiny.

I've looked at each of the steam ovens that have come out - this has been the first one that interested me after the CSO.

Mark, How much flour do you start with for these loaves? I usually use 450gr and I'm wondering if that is too much for the height of this pot. You've got some beautiful loaves there with nice crumb, and I dont see little holes on top from those pointy things in the lid 8^).

Summer is here and I'd really like to use my Breville instead of the big oven.

I use 3 cups of flour, or about 360 grams.

but the CSO was made for toast

 

not the FBCO

 

@md8232 nailed it by mentioning the FBCO might be too big.

 

is it a time for an extension to be built into the kitchen 

 

lengthening the counters 

 

so there might be room for both the CSO  and the FBCO ?

 

as the borders are closed , you might use that to your advantage.

 

just a thought.

OK.

450 Combi with a 5 minute preheat.  Steamy when I opened the door.
Toast is on the top rack @ 1.75” from the heat element. 

I’ll start with 3 minutes and see where we are.

2nd attempt. 
same time & temp.  5 minutes preheat. 
I flipped the toast at 90 seconds. 
3 minutes total. I think we have a winner. 
Third pic to show it is soft inside.
