Spaghetti cacio e pepe.

 

For this dish, I do cook the Setaro spaghetti in less water than nonna might normally use, so for 8 oz. of pasta, it's cooked in a little more than 2 liters of water. The starchy water helps create the emulsion with the pecorino cheese, and the emulsion coats the pasta nicely. Only other ingredient is the black pepper, toasted and then crushed in a mortar and pestle.

Yesterday was my wife's birthday and these are her requested dishes.

 

Chicken soup with stock, chicken, carrots, celery, onion, spinach, corn, peas and rice noodles.

Dinner turned in to a bit of a chore yesterday.  The original plan was for squash soup, but it turned out that I did not have all of the ingredients I needed.  So, I pivoted to an eggplant stir fry, but the eggplant was rotten.  So, we ended up with a chicken-bell pepper-shiitake mushroom-basil stir fry.  It was fine but not really what I was in the mood for.

@gfweb – the goose looks so good.  I’ve only ever tried to make a goose once and was not terribly impressed, but I was a fairly new cook at the time.  Your confit is making me think I need to try again.

 

@BonVivant– as always, your food and your photography is beautiful and so appetizing.  What I’m noticing so much with these pictures is the little cork and string Christmas trees.  They are adorable.  I saved one of your pictures and am determined to try to make some. 

 

@Shelby– I really want to try your method for fried chicken.  My IP won’t SV, but I can use my Anova and get it to that point.  I really want to do it soon, it looks SO good!

 

@mgaretz – Happy Birthday to Mrs. Mgaretz!

 

I missed getting a plate picture on Xmas Eve.  We had SV pork roast, gravy, sweet potato latkes w/ brie and arugula, fruit salad, Marlene’s Broccoli Gratin, roasted mushrooms and terrible cornbread muffins (a failed recipe):

Twice baked cheese potatoes, turkey, cranberry-orange sauce, Brussels sprouts, sweet potato souffle, and Jessica’s Challah and dried fruit dressing.

Pickly stuff and pimento cheese and celery. 

 

And then on the 26th, the strange combination meals started due to bizarre assortments of leftovers in the house:

This was dinner – half an ET bagel with cream cheese and smoke salmon and a slice of fabulous pork (steamed in the CSO to reheat) and gravy. 

 

On the 27th, dinner was an open-faced hot turkey sandwich with gravy, a twice baked cheese potato, and sweet potato:

Remaining bao filling of tofu, eggplants, pepper scallions, ginger, douchi, oyster sauce, spices. With fresh buns.

Stir fried spinach with eggs, dried shrimp, garlic.

Black sesame and honey buns for dessert.

Also ouzo, because why not.

That's one handsome choux. I'd love to have one, even though I'm usually partial to pastry cream over whipped cream.

I haven't made any choux pastry in years. Added to my overflowing ideas list 😅

Paneer butter masala, chicken curry, maharajah rice and naan.  I made the paneer from scratch as I have a glut of whole milk in my freezer thanks to an Instacart mixup.  It was so much better than store bought paneer.  I don't think there is any way to go back to store bought.  All recipes are from Meera Sodha.

With you on the fresh cheese. My Instacart mix up with milk I did not order spoiled me too.

A few meals from Xmas eve on...

 

                                                       Xmas Eve Paella for two with a lot of rice leftover We ate all the protein in the dish.

Xmas Day, Beef Wellington with green peppercorn gravy for two. I had just picked and trimmed up a whole tenderloin, so designated a small chunk for our dinner.

Boxing day, we had turkey! Picked up Lemon - Sweet pepper Seasoned drumsticks at Safeway on sale. Two drumsticks per pack  cost me $3.59! Roasted them in the oven. They were good and satisfied the "turkey for Christmas".  It was great with the leftover paella rice.

And tonight, I finally steamed one of the half dozen whole pickerel from my supplier. He usually sells only baby pickerel fillets from Lake Winnipeg. I asked for 6 whole ones, and Henry obliged. The pickerel was gutted, de-scaled and was the perfect size for two.

Pickerel was enjoyed with a plate of pea shoots and jasmine rice.

Not sure there are pickerel farms...from the minimal knowledge I have on the matter.

 

Not a huge market for them.  From what I gather, hatcheries that do work with them, but then are release back into the wild.
