Yes it's 50% white and 50% durum. The durum is yellow and it also has an egg in it.

First restaurant meal since January 2nd. A light repast in a Dong ethnic minority restaurant. Everything, we were told, was organic.

Fire roasted eggplant in a sauce of roasted tomatoes and Sirene cheese. Fresh oregano, chili, thyme, garlic, olive oil. Toasted walnuts.

Warm salad of stir fried zucchini, caramelized onion, tender chickpeas. Sauce of yogurt, tahini, lemon, sumac, zaatar, garlic, chili.

Store bough baguette.

This weekend’s project: Gyros (as correctly predicted by @Kim Shook 😉). This is the Greek variety, made from pork, not the US version, made from ground beef/lamb. That‘s next weeks project ...

 

Pork neck, sliced thinly, and marinated with plenty of garlic, onion, spices, oil and vinegar.

Unfortunatey, 10 min in, the gas bottle ran out if propane 😪. Sunday - no shops open for gas bottles ...

Disaster. But(t) ... the skewer just fit into my oven. Of course no rotation, and only limited option with hot air circulation to crisp up the meat after internal temperature reached 69 oC - well, beggars can’t be choosers !

Gyros actually turned out fine - not perfect, but taste was pretty great, some extra crisp parts, some tender ones, and all plenty juicy.

@Duvel I am beyond hungry now - nice save. I am a pork neck fan on the charcoal grill off to side so slow. . Twice I have had an oven with the rotisserie built in and ... never used it. But i did have the stand alone kind. Looking forward to next week's experiment.

Last night we had our dinner delivered. It included Pom Bom chicken livers. The pomegranate sauce is so good.

Lahm bi ajin pizza, which I’ve never tried, was included. I don’t think I’d have known there was any meat, if not for the menu description. Regardless, I liked it.

I roasted a Poulet Rouge from Joyce Farms in the steam girl. Roasting a whole chicken doesn't get you quite the crispy skin that, say, roasting thighs does. But the bird remains nice and juicy throughout, so that's good. 

 

Significant Eater is not a fan, as she says, of the "sinew" or what appear to her to be undercooked bits; she likes the breast. So being the great husband that I am, I remove half a breast off the bone, sorta slice it and pull it apart, and plate it.

I also poured all the roasting juices (I'd roasted the bird atop thickly sliced onions with those potatoes strewn around) into a small saucepan, added mustard, lemon juice and a little white wine to make a nice jus. I ate a leg and a wing and shhhhh - the oysters.

After last night's huge dinner, I wanted something simple tonight. Doesn't get much simpler than this.

Pork cutlets with potato and carrot mash with olive oil. Whole grain Dijon mustard. There was a side of greenery which I not only forgot to photograph, but also forgot to eat.

A recent midweek supper. Colombian arroz con coco meshed with Thai style mango with coconut rice. Short grain rice cooked with toasted coconut and a bit of spice (chili, cinnamon, salt, pepper) finished with fresh coconut milk. Room temp mango. Mint. Coconut flakes for serving.
