Nothing special for yesterday dinner. Very little vegetables left in the house. I made a cous cous with broccoli stalks, carrots, a couple mini peppers and chickpeas. In the end only my son ate it 😁. I made again the corn fritters, they held much better this time. Not in the picture a sockeye salmon on the cast iron grill for the girl and a salad for me.

Finally got a Chinese plate, then dropped it 5 minutes after leaving the shop. Well, I fixed it when I got home (photos below). Clumsy perfectionist.

SV pork neck. I made a "char siew" marinade with all the typical ingredients but without hoisin. I don't like hoisin. Mine has chipotle sauce in it.

„Mapo Dofu“ w/ Sichuan chili oil. Pizza is for us essentially a way to use up the cold cuts in the fridge. I had some mapo dofu from yesterday and gave it a try akin of pizza bolognese. It worked pretty well - only disappointment was that after I thought I was so inventive I checked, and of course David Chang and Rene Redzepi did that during their guest stage at Mission Chinese in SF already. Was good, nonetheless ...

And another good, yet already commercialized idea from Spago, Las Vegas: Pizza with herb cream and smoked salmon. Very good (if I may say so) !

Last week the grocery store had huge bags of bananas for 1.49 total.  So, we've been eating a lot of bananas.  They are starting to go bad so banana cake for dessert.

One of my favorite toppings combo :) Though I like to throw in some motz along with the ricotta. All of the pizzas look great.

 I tried a chicken teriyaki recipe that looked good.  Charlie told me that there were teriyaki restaurants everywhere in Seattle and that they all served a simple iceberg lettuce salad with a dressing he really liked.  He said he ate those salads.  He looked on his phone for a teriyaki restaurant salad dressing and one came up.  Turns out it was the same one. He not only ate the salad, he asked for more lettuce.  Neither of us were as excited about the teriyaki sauce. I'll try see if I can find one we like better.

i have lost 10 lbs in three weeks.. No real set meal times, just whenever we are hungry... We also have missie k with us, who is home from college.. She is not vegan but, I cook most of her meals.. Sometimes with meat, sometimes with us.. She is super in to ground turkey these last few weeks and learning to cook for herself.. I taught her some seasoning things I like.  She loves making a mustard salad dressing. 

Occasionally  I will cook for her when she gives me her measured ingredients.. X amount of turkey weighed, olive oil measured and then i can add spices and procedures and such... 

This was a turkey kebab.  I grated ginger and garlic and added soy and cornstarch and garam masala and I forget what else.. Avocado salad.  Also, i used barely any oil which blew her mind.. So, now she may get interested in grilling.

a couple of days later.. Ackee, spinach, chickpeas, I made that cilantro.. I had the ackee sitting out longer and the brine taste dissipated a bit.. Stronger flavors accompanied it as well.  I liked the ackee this time around.  I also cooked it lighting with some oatmilk and tried to imitate scrambled eggs.  This was a winner..  This or something like this should go on a menu soon.

The green sauce I made for fried yuca.. That was dinner one night... 2 jalapenos, i head of cilantro, 2 garlic cloves, cumin, vegan mayo, a little lime a little vinegar, salt, pepper, sugar.

i have been making lots of juice with leftover vegetables.. Anything about to go bad, gets  tossed in.. lettuce, peppers, ginger, jalapeno, apple, celery, carrot, the list goes on.. just juice it. I like a lot of lime and ginger in whatever juice i make 

look at how youthful it makes me look

chana masala nachos with fake cheese, fake sour cream, fake meat.. served with a really good real salsa of tomatoes, thai chiles, cilantro, avocado. This was pretty damn good actually

I made a few other things this weekend.. A vegan pasta, some lettuce wraps with the peanut sauce, cucumber dish chinese dish, a couple of rice noodle dishes... Lots of vegan things.

This is kind of funny... for the first time in my adult life, I do not have butter in my fridge.. So, we have now started using mayo and my MIL margarine she left, to make grilled cheese sandwiches.. The boy has made no mention, of the change.  Also, we are starting to make some headway with spicy foods.

Hi Norm, can you share the dressing recipe? We really like Soy Vay’s Teriyaki Sauce.

My closest Chinese does a shredded iceberg and the dressing seems to be a touch  of sesame oil, light vinegar, sugar, ginger (juice I think) - I asked the owner for an interview for a local magazine but then the world imploded...

there are many variations of that classic american japanese restaurant dressing.. some say add carrot, some say onion, there are all sorts of things.. I like to take my mortar and pestle and smash together some ginger first, then add soy, sweet soy, sugar, oil, an undetectable amount of sesame oil a little rice vinegar and that's it.. Sometimes, onion, sometimes carrot.. I like the sugar,soy, ginger combo.. From there, many things can happen.

China Coast Salad Dressing
Ingredients
  • 1 cup Mayonnaise
  • 10 tbsp Rice Vinegar
  • 4 tbsp Sugar
  • 4 tbsp  Sesame Oil
  • 2 tb Soy Sauce 
  • 1/2 tsp Garlic Powder 
 
My advice is to use a blender and add the oil last, a little at a time so the mayonnaise does not curdle.

Serve dressing cold.

Mapo tofu made with expired tofu (best by 5/20/20, please don’t judge), pork, sauce from a jar.  Served over rice.  It was lip tingling good!
