We had a 4 day break over on North Strtadbroke Island as they have lifted restrictions. I even had a beer at the pub.  WOOT!

The house is in restoration at the moment so no oven or stove so the BBQ it is.

 

Nachos done waiting for salsa, sour cream and coriander.

It was so good to get away again. I even got a morning fish down on the main beach.

We each picked two restaurants that do Covid takeout. Picked the name out of a hat. One of hubbys Mexican choices 'won'. 

You win some you loose some. Flavours are awesome. Temp/portions not so awesome.

   I hope so because I already have a cart full of delicious looking snacks and we are putting up a large inflatable pool this weekend. Snaking like that in the pool...😎

Your rye bread has a lightness rather than the sometimes dense ones. Thumbs up! I do like the heavy ones for open face sandwiches but I could happily sit at your table. Our Sunday ritual was rye w/ caraway from Jewish bakery after church. Yup - LA bit of a mash of cultures in a good way

Pasta salad...little shells, grape tomatoes, TJ’s marinated grilled artichokes, red bell pepper, pesto (used some of the artichoke dressing plus red wine vinegar to thin it out). Shredded rotisserie chicken breast. I ate it over a bed of lettuce with a little balsamic glaze.

Store bought ricotta and parmesan ravioli, served with beans in walnut pesto (salsa di noci), with parmesan, milk, a little garlic, marjoram, pepper.

Air fryer chicken thighs, baked potato, grilled spring onions from the garden and the last of this year's asparagus steam baked in the CSO with Aleppo pepper and a pureed asparagus sauce from Happy In The Kitchen.

pork ribs marinated with garlic, ginger, onion, hoisin, jalapeño, and a little honey- left ribs in sauce

Offset fire braised on a sheet pan adding one 12oz beer to the marinade. cooked 20 min turned and cooked 20min more.

Removed from pan and put over hot part of fire for 5-7 min per side basting with reserved marinade.

Served with roasted cauliflower and a Crozes Hermitage (syrah)

Stepmother wants an air fryer. Your chicken may push her over the edge.
