The things we do for our kids. I am outside. Again. 

If you asked my husband to use 1000 adjectives to describe me, he'd get to the curse words before he got to "outdoorsy". This is my kids first time camping 😂. I hate this. 

 

Camp burgers. Just onion, cheese lettuce & homemade patty.

Everything I make at the moment is from the freezer. Buns, patties, and I think the lettuce is nearly a week old 🤦‍♀️. I'm really trying to do the 'essential only' shopping.

A few years ago Saffron closed down. It was one of our favorite restaurants in Minneapolis. Lucky for us the chef/ owner published a cookbook. We finally tackled making Duck Kefta Tagine with Sweet & Spicy Tomato Sauce. It took ordering a lot of unique ingredients but we recreated close to what was served at the restaurant! It's SO GOOD!!!!

Couple of nights ago, influenced by some folks here, John brought me some canned green beans.  I had made mashed potatoes to go with the leftover meatloaf for his dinner.  

I cooked them low and slow with a little veg stock, garlic and butter.  Closest I have had to the beans I remember from down at Luby's Cafeteria in Hooks, TX.

HIS:  meatloaf, beans and mashed potatoes

HERS:  beans and mashed potatoes reinforced with some garlic and herb cheese and a scoupson of French onion dip.

Simple dinner the other night..  It started one way and then, cocktails happened, then we forgot about dinner completely.. Then I was forced in to making the steak against my will and my better judgement.. but, it was delicious.. dry aged.. I wish it was thicker as it was only a pound and it was pretty big and there was a bone... I overcooked it slightly to my taste but, was still medium rare-ish to most people's eyes. But, i overcooked it like 30 seconds a side.

Then simple potatoes...boiled and them smashed and cooked crispy with thyme and olive oil or butter, i don't remember... it was either two nights ago or three weeks ago.. i lost track

There was also spinach that I just blanched.. And I know I composed a platter but, can't find evidence of this,..

Last night I made miso soup, added some bonito flakes, some mushrooms, some chile oil drank out of a mug... A small slice of pizza for lunch...  some cheese and crackers and celery for a snack.. Woke up and ran 5 miles today...   I had to put the breaks on before my clothes stopped fitting.

Yesterday I made another batch of no-knead bread and made extra dough for pizza.  The pizza toppings were mozzarella, onions, mushrooms, red bell pepper and chicken apple sausage.  Probably too much topping for the size of pizza but it was good.  I pre-baked the crust and it came out extremely crispy.

@BKEats I follow This recipe. Also I can't get achiote paste so I make a simulation.  I BBq and don't cover the bird as suggested also marinate for 3 - 4 hours. Not overnight.

The problem for us gluttons is we graze all day then come meal time we're not hungry.  I cooked a ham early in the day and if it hadn't been for my wife hogging up the counter top  in front of the ham it would be gone by now.  Dinner was pop overs, deviled eggs and a little bit more of the ham.
