A little cashew ricotta.. Made this by taking raw cashews, adding a bit of water, a quarter clove of garlic, salt, pepper, sugar, lemon, olive oil.

I had not put the eggplant fried from last night, into the fridge.. I took a portuguese roll and toasted the inside lightly.. Then toasted the eggplant.. The layered with tomato, garlic and basil concoction.  A schmear of the cashew ricotta on the other side.

Good like the photo about but, I put in the sandwich press for extra crisp..

So, what does a vegan do when you want to coat something before a fry? 

Why you make a slurry with chickpea flour and water... Make it as thick as you would like.. I tried 4 different thickness and well, forgot to pay attention to which I liked more. But I have been noticing egg replacers and various suggestions for frying... I will to attempt to making fried tofu nuggets with this dredge in the near future. 

How cute is this three part breading station I set up..  It made me think it would be a good item actually.

The eggplant was sliced and covered in salt and left on a wire rack... I salted heavily and let sit for a couple of hours, i flipped and salted the other side.. I then patted dry and put in a plastic bag.. This was on Saturday I think.  It stayed until I pulled them out, last night.  

Also, I think Sat, i had roasted these san marzanos in the oven for a couple of hours at 200 degrees with garlic... Once fried that would be the sauce.. 

just heated through gently
