Lunch 2020

I have eaten this for my lunch every day for 4 days - after eating it for tea on Sunday 🤦‍♀️

This is why I don't roast often! I hate eating leftovers, but I hate waste more! Mission completed.

And yes, a teaspoon is the only weapon I have for desk meals - no I haven't fixed that for oh 7 years 🤷‍♀️

We had a bunch of Tomatoes on the table, which needed to be used...  Some more outside.  I hate peeling tomatoes, but I have a vitamix so why bother when making a marinara. 

 

So I wizzed the heck out of the tomatoes (most of which were cherry tomatoes)

 

I used the vitamix to finely chop a carrot and 1/2 an onion.

 

Into the pot went the Onion and Carrot with some olive oil and red pepper flakes.

 

Cooked that for a while till soft, and add the pureed tomatoes.   Added in some homemade concentrated tomatoes (better than a paste) along with 2 bay leaves and chopped basil and oregano.

 

Cooked it for 40 mins... Pretty darn good for a hack job, better than most cans of sauce IMHO.  The texture from the carrots really helped, served with bow-tie pasta.

Isn't that the truth! My friend used to say we get our kids on loan, to help them become good humans. Then we give them back to the world.

 I love the look of these leftovers! I usually love all leftovers, granted I never really make enough to last four days. 😁 I made chicken soup on Monday with a whole chicken and have been repurposing the chicken for days. There was chicken salad, chicken quesadillas and chicken sandwiches like the below. (Always looking for ideas if anyone has any!) It has chicken, Sriracha lime mayo on top and bottom, tomato, red onion and red cabbage (which I have a glut of and am running out of ideas for as well) thanks to my CSA. On semi-wheat bread.

What do you do when you have more basil than you know what to do with? Pasta with deconstructed pesto (minus the pine nuts but I added some fish sauce for a bit on anchovy-ness.

Lunch at a friend's house. Cooked by friend. Typical Chinese home made food.

 

Pork soup with shiitake and carrots, seawater clams (Paratapes undulatus), stir-fried rape and fried rice.

My son loved those fish shaped soy sauce tiny plastic containers. I used to buy pig ones too. Since the other kids with bento lunches had them as well there was rarely a "theft" issue.

Quick Korean-ish stir fried spicy noodles. Pasta cooked in alkaline water (I love this technique). Soy is gochujang, soy sauce, garlic, fish sauce, a bit of sugar, MSG. Eggs with garlic chives. Stir fried zucchini and a bit of charred cabbage.

Home made pappardelle in cream and herbs sauce (tarragon, thyme, lemon thyme, sage, parsley, chives, spring onion, marjoan), some garlic, pepper, parmesan, dry white wine.

Served with more wine, because why not?
