@Kerry Bealdid a little grocery shopping for me the other day. I asked her to get me a couple of bunches of beets. I don’t usually use the beet greens because in my experience they are often well past their prime and too skimpy to make the effort worthwhile. But not this time. I have never seen such an abundance of wondrously fresh beet greens. 
 

I blanched the greens and stuck them into the refrigerator. I roasted the beets in the steam oven (425°F steam bake for a little over an hour for the largest ones). Today I took some of the beets and gave them a pomegranate molasses dressing. I sautéed the greens with a little garlic and then mutilated an egg! Damn. But on some toasted bread it all tasted just fine.

Toasted and garlic-rubbed sourdough with goat cheese and Campari tomatoes. So simple. So good.

 

edited to add:

 

Given social distancing rules we ought to make the best of them and enjoy our garlic at any time of day!

Loaded breakfast flatbread. Garlic naan with goat cheese, beets dressed with pomegranate molasses, beet greens and cherry tomatoes. (Having some cooked vegetables in the refrigerator makes for fast and easy meals.)

Working today. 

 

 

Put a pot of my favourite meatballs on to simmer this morning.

 

Destined for spaghetti and meatballs for dinner.

Viennese eggs on toast (from Midnight Chicken....) and my take on slow roasted tomatoes. 
 

Absent the chopped scallions, the eggs are nursery food — soft-boiled eggs mashed up with some butter. I used to call them mug eggs and fed them to my husband when he was feeling under the weather. 
 

But the book, winner of the Guild of Food Writers General Cookbook Award 2020, caught my interest.

NQS (Not Quite Shakshuka). I had some slow roasted cherry tomatoes to use up. I heated them with a little cream so there would be enough liquid to poach an egg.

@Ann_T – as always, your biscuits are life goals!  Also, I am generally a “breakfast food” for breakfast person, but I’d eat that meatball sandwich in a minute!

 

@CantCookStillTry – I had a giggle at your “toast”.  I detest toast that isn’t TOASTED😠.  If I order toast, that’s what I want – not something indistinguishable from stale bread.  One time when we were out for breakfast, I got what looked like your “toast”.  I sent it back and a few minutes later received a plate of what will always be called by us “revenge toast”.  It was charcoal.  I looked at the server.  She looked at me with such trepidation.  Her eyes asked me to please not make her go back in that kitchen.  I relented and ate eggs with no toast. 😄

 

 

I hurt myself last week doing PT for my knee.  Not sure what I’ll be cooking/eating for the next little bit.  I am basically couch/bed-ridden.  Mr. Kim is being the cooking angel right now.   

 

A few days ago:

On Saturday, after my doctor’s appointment, we picked up breakfast at a new favorite place, Rise.  Mr. Kim got the Buffalo Chicken biscuit:

The biscuit was darker than that – I had to lighten the picture up a lot due to being in the car with bad light.  I got the biscuits and gravy with sausage and egg:

The sausage could have used a good crust and the egg was slightly overcooked, but everything was tasty.  We shared their fabulous Cheddar tots:

Crème brûlée doughnuts with a perfectly glassy top that shatters into lovely shards when bitten into:

Today he stopped at Krispy Kreme after his morning doctor’s appointment for their new limited time caramel doughnuts:

The one on the right is just caramel glazed.  The one on the left is caramel glazed with caramel icing and a salty crunchy sprinkle on top.  They were ok.  Mr. Kim and Jessica liked them better than I did.

 Made a beef stew for breakfast yesterday.  Was suppose to be Tuesday's night dinner, but that didn't happen.

Oatmeal (rolled oats made with water and milk) with peanut butter swirled in, some salt and a bit of sugar. Bananas and toasted walnuts coated (not cooked) in a brown sugar and butter syrup, a bit more salt. Orange zest, nutmeg, cinnamon.
