Tonight's dinner. Roast Duck with an orange port sauce.

MOE'S PLATE WITH LEG AND BREAST

My favourite Roast Duck recipe is from Ina Garten (Barefoot Contessa). The duck is simmered first in a pot of chicken broth and then left to air dry before roasting in a hot oven.

I got a head start by getting the first stage done before leaving for work. and I made the sauce. After simmering for 50 minutes the duck was left to cool for 30 minutes before going into the fridge to air dry.

The duck was taken out of the fridge an hour before I got home from work so it could come to room temperature.

Sides were braised red cabbage, steamed green beans and potatoes roasted in duck fat

Oh, dear Lord, @Ann_T!  That duck, that sauce, that cabbage, those potatoes.  I am not a well woman and I nearly fainted at the sight of that deliciousness.  What an incredible way to cook duck.  I really want to do that.  Would you please steer me towards the sauce recipe?

 

We are still sick (I am at that point where you start to think that this is just how you are going to feel for the rest of your life - "Oh, well - I'm 60 now, I guess this is as good as it gets" 😉), so was comfort food tonight- breakfast for dinner:

@Kim Shook, I'm sorry that you aren't feeling well.  Hope you are both better soon.

ETA:  @Kim Shook, I just noticed you asked about the sauce too.    I kind of winged it.   Started with a roux, cooked until golden, and then added broth that I made from the neck of the duck started with chicken broth.  Zest of a large orange, the juice of the orange, fresh thyme and added a crack garlic clove. Simmered for about 20 minutes.   Added more orange juice, port, and I wanted the sauce a little sweeter so I added a dollop of an Apricot brandy jam that I had on hand.   Orange marmalade would have worked well too.    Moe loved the sauce.

Last night we had grilled tuna with Thai flavors, rice and smacked cucumber salad.  Here's the tuna

It is going to be 102 today so I got up early to cook and dinner is already mostly made.  We are having cold fried chicken, corn on the cob, salad, spiraled zucchini "fries" and my super secret gourmet biscuits* (* Red Lobster biscuit mix from a box 😉 )  Pictures later on.  Stay cool everyone!

Dan dan noodles (suing minced mushrooms and tofu instead of meat).

Stir fried kohlrabi with brown sugar, five spice powder, light soy sauce and cashew.

Not the prettiest, but it was tasty. Spanish rice with chorizo, chicken thighs, saffron, pimenton, etc.

I've been gathering together the ingredients for tonight’s meatloaf dinner.  A new, to me, recipe that is a copycat of Cracker Barrel's.

Never made this one before but it looks good.

The heat wave is coming tomorrow so I'm looking forward to leftovers and sandwiches.

What Sarah Leah Chase called "Hungarian Chicken", a recipe from her paternal grandmother which her father claimed never came up to his childhood memories.     Since we don't have that perspective,, it was quite okay.    On wide noodles with side of blistered sprouts.

When I heard that the temp would rise above 95 today, I got up early and made potato salad and coleslaw. Hot dogs on the grill with those sides tonight.

@Ann_T – thanks for adding the note about the sauce.  It just sounds perfect to me and something that we would love!

 

@robirdstx – that steak and snow peas look so good!  I got a wild urge today for a beef/snow pea/bean sprout/water chestnut stir fry.  But I made 97 gallons of stew, so I guess my stir fry will have to wait. 

 

Sometimes when he is judging a BBQ competition, Mr. Kim is allowed to bring home leftovers.  Today I used some of them (brisket, pulled pork, ribs, and chicken) to make Brunswick Stew:

Those are hand cut egg noodles (I really need to invest in a cutter extension for my pasta machine).
