First time I tried 'make ahead' hard Tacos. Usually its an assemble your self deal with a huge amount of dishes on the table for 2.5 people. Which results in a long bout of me stacking the dishwasher followed by a longer bout of my husband restacking it the right way and a lot of muttering. The slight loss of crispy was worth it in my opinion. 

 

I Prestuffed with the cheese, refried beans and chicken mix and baked for 20 mins. Toppings were add your own. Pictured are Master 6s.

Frose before dinner.  I had a bottle of sweet rose that I did not want to drink as is (too sweet) but it made for tasty frose

Beef tips and gravy over mashed potatoes. Marinated veggie salad (broccoli, cauliflower, cucumbers, snow peas). Sauteed squash and onions. I had wax beans, but got busy doing something and let them burn, dammit.

 

Photos didn't turn out well, so use your imagination.

Not sure why, but I have been craving baked beans of late. Tonight, I did a batch in the IPot, complete with a smoked pork hock, otherwise, it was a warm weather dinner that included Korean BBQ wings (cooked on the grill) and cold leftovers.

There are a few so=called  "easy" meals that are, to me, a giant PITA.  Tacos are one and hamburgers and hot dogs are the other.  Not because anything is difficult, but because of all of the go-withs.  My family is unable to eat any of these things without a gazillion condiments, toppings, etc.

Totally understand and agree.    I have always said that I could put on a dinner party for 10 and dirty less utensils in the kitchen than when I make a BLT sandwich.

Pizza is another chameleon.    Just crust and...but the and can take an hour to slice and dice, before you even get to the roll out.

I have yet to figure out how to get my tortillas crisp.

Yes! Not pictured. The 2 types of Salsa. Sour cream. Guac (store bought, I Avacadont). The fact I roasted a chicken to make said 'make yourself meal'... 8 different spoons, couple of forks.  I'll conceed its so much easier to do a Taco bar for say, a party, but when its a small family meal.. someones still gotta assemble the assembly line, and tidy it up!!

@liamsaunt, more info, please, about how you made these? I would think the moisture in the zucchini would make the attempt to make them crisp nigh near impossible. Thanks!

My son has been searching in restaurants and looking for recipes that might replicate the chicken fried steak he had at the high school cafeteria.  A friend of mine gave me one to try. I doubt it will be like the one he remembers but it sounds really good. It is seasoned with Creole seasoning, used buttermilk instead of egg in the coating and is fried in bacon fat.  Here is the dish but we have not tried it. I will re-warm it as soon as Charlie gets off work.
