Those cap steaks are good but I hate that Costco needle tenderizes all of their meat

I think you can ask for non-needled meat.

 

I called a local Costco and they said they did that upon request.

 

I( advent yet gone there to purchase meat and check this out, 

 

but the butcher I spoke to was not surprised by the question 

 

and understood the issues w SV punctured meat.

Is Cosco's needling eat a local thing?   We gave up our membership several years ago, and we were never huge meat buyers there, but I've never seen their meat treated that way, and friends have often shared prime grade they bought at Costco that was so treated.

The last of our stash of Lucca Delicatessen cheese ravioli.    Here  with simple butter sauce.    A sweet good-bye, maximizing their gentle flavor.

I use fresh fish.  I made fish tacos for dinner on Sunday and trimmed off all the ragged parts and thin pieces before cooking, which I saved for the burgers on Monday night.

 

Last night, crispy chicken with lemony arugula-parmesan salad on top

After a basically lost day (rough intercontinental flight plus no cold beer in the house) I had to make ends meet with what was available ...

It's summer and I can't be spending much evening time in the kitchen, as the kitchen might as well be a terrarium - facing southwest, it heats up like an MF in the afternoons. So, I put stuff together, and do any main cooking, in the mornings. Then I serve it.

Gazpacho While still waiting for real tomatoes, this was actually quite good using 1/2 canned Muir organic tomatoes and 1/2 peeled and seeded fresh Romas, cucumber, soaked red onion, roasted yellow peppers, roasted jalapeño, Tabasco, garlic salt (!), olive oil, lime juice, cilantro, etc. etc.

Seared red Argentinian shrimp over fresh corn salsa. Corn taken off some sweet fresh ears and pan roasted, roasted jalapeño and serrano, red onion (soaked), lime juice, olive oil, s & p. Alongside some Yukon Gold potato salad.

Tom yum.I used a base of red Thai curry paste, along with some herbs and spices (lemon grass, makrut lime, leaves, ginger, fresh chili, coriander stems, lime zest, coriander seeds) - cooked in coconut oil.

Shrimps, enoki mushrooms, stewed soft tofu, tomato, onion. Coconut milk , lime juice. Plus some rice noodles.
