Grilled chicken thighs with Bullseye sauce:

Even though I was introduced to real BBQ at a young age by visiting my grandparents in NC, this is what was meant by BBQ chicken in our house.  My mom never grilled it either.  It was oven baked (usually bone in and skin on pieces of chicken) and slathered in Kraft BBQ sauce, then broiled for a few minutes to give it a little char.  I loved that chicken and still do.

I've never had this, but you're convinced me to give it a go.    It can't get much simpler.    Thanks!

Thank you!  I just brined them for a couple of hours and soaked them in Bullseye for a few minutes and Mr. Kim grilled them on high until a little charred and done.  I brushed with a little more BBQ sauce before serving.

I have saved that for a hot summer afternoon on the patio, thanks.

Rather meager 4th celebration

Giant Chinese pancakes (actually have no idea how the usual recipe resulted in these big guys)

Torrential rain, so no Kings Dominion fireworks, but Mr. Kim did manage to get the dogs on the grill:

Chips and dip:

I love California onion dip.  I can make a whole meal out of just it and chips.

Hanover tomatoes and Duke’s:

Honestly, the Canadian Campari’s we had with breakfast this morning tasted better than these locally grown Hanovers.

NC Slaw and Ukrops (local – used to be a grocery store, now just do prepared foods sold through other stores in the area) potato salad:

Marinated cucumbers:

Hot dog chili (canned):

DSCN9810.JPG.bce2bb93856e46b05bcbb37fb0d443a4.JPG

I’ve got to start trying hot dog chili recipes again.  This glop will not do.  It is mostly sauce, so that when it gets hot is it like soup.  I like hot dog chili that looks like finely ground beef.

Corn:

Plate:

Included fixed up canned beans.  I added my usual stuff (BBQ sauce, onions, garlic granules, mustard) and then some BBQ leftover from Mr. Kim’s most recent BBQ judging – a combination of rib meat, pulled pork, chicken, and brisket.  They were amazing.

Dessert was peaches, watermelon, and some Ukrops cupcakes that I tarted up:

My energy level and sense of taste are still not up to normal but I am trying to get back to cooking.

This was Nasim Alikhani's turmeric chicken from the WSJ 6/24/2019.  I don't blame Alikhani in the least.  Dinner was not bad at all but it was bland and brought little joy.  The basmati rice was the best part.

Inspired by @Anna N I steamed some dried apricots in the CSO.  Some apricots are apparently more dried than others.  These might have been about right pressure steamed in my Fissler for half an hour.  I could not chew them.  Salad did not do much for me either.

Try googling "Texas weiner sauce recipe" or "Texas hot dog sauce recipe".  It's all over around here.

Nothing is better than frying in lard.

Nothing.  Do not quote me on this.

This sounds marvelous.   It is a cousin of a delicious if lethal drink from my very distant past called a Bootlegger:

1 part gin or vodka

1 part grapefruit juice

1 part fresh mint

1 part crushed ice

Mix in blender and pour.

We recently returned from a trip to New Orleans (gained 5 pounds!) and my wife fell in love with red beans and rice.  Naturally she had me make it.  I made it in the Instant Pot with dried beans and andouille sausage.  Basmati rice also made in my other mini IP.  First time for real dried beans (I'm not counting peas and lentils) and also for rice.

My plate after I'd eaten some:

@MetsFan5 – the corn was good, but not great.  It’s really too early, I guess.  But we couldn’t have the 4th without it!

@suzilightning– Thank you.  I’ll try that.  My biggest issue is that we have two places here that make what I consider the preeminent hot dog chili and neither of them sell it except on a dog.  They are not saucy at ALL.  They really look like fine hamburger meat (like when you boil it in water for Cincinnati chili), but the flavor is so good.  Not spicy, not especially herby.  Hard to describe.

Had a zucchini get away from me already so I shredded it to make venison meatballs so I could restock the freezer.  That called for spaghetti night:

For Independence Day we had caveman steaks--I guess they are really called cowboy steaks.  I've seen this cut on TV but never in real life.  They were on sale so Ronnie bought 'em just for fun.  We decided two would be too much, so one went in the freezer and he did the other on the grill.  Meat was wonderful...dunno why they have to scrape the bone like that lol.
