@Smithy  I have never seen mesquite-smoked olive oil.  Does tte smokiness come through?

Yes, it does. In small doses it just adds a nice depth to the flavor, without being obvious. The first time I tried using it, I used it exclusively to saute some vegetables, and the smokiness was overwhelming. I liked last night's lighter touch better. :)

I really love my Breville PC.

I was late getting home from work tonight.  Didn't get dinner started until almost six pm.

But we were eating by 7:10.

Lamb shanks cooked in the Breville PC.  Mashed potatoes, steamed green beans and radishes.

ETA:  And dessert is served.

What seasonings do you use with that curry?

Tuesday night dinner started with a salad:

Kroger had some of there Ukrop’s (a now-closed local grocery store revered by the Richmond VA area) prepared foods on sale the other night and we picked up a baked spaghetti intending it for a few lunches for Mr. Kim during the week.  It turned out to be a fortunate thing because I was hit with what has turned out to be the worst cold I’ve ever had.  So – a little while in the oven and:

Quite tasty baked spaghetti:

I have been in a codeine coma on the couch since then and haven't cooked a thing.

1-10-10, overnight pre-brined chicken breast with stuffed yellow* bell peppers. The stuffing is rice edamame, scallions and a touch of lemon juice.

* the only type I tolerate.

It's a process...

usDqyvW.jpg?1

El sofrito, untraditionally made with RAMPS, red bell pepper, tomato, onion (and shhh, chorizo).

XbcVEBK.jpg?1

The rice added and cooked for a few minutes, prior to the addition of (home made, of course) chicken and clam stocks infused with saffron. Cooked uncovered.  Shrimp steamed on top of the rice toward the end of the cooking time, and then removed so they don't overcook.

Finished product - according to Significant Eater, my best tasting attempt yet.

Used the second quick puff pastry that I put in the fridge Wednesday night to make a Leek, Spinach and Feta Tart for dinner last night.

I might never buy puff pastry again.  This one is quick and easy to make.

I also added some roasted red peppers to the tart.

@HungryChris your table always looks so inviting - like anyone could come in, sit down, start chatting with you and have a nice comforting dinner.
