Last night's dinner.

 

 

Hot chicken sandwiches on my bread with homemade fries.

We were in Victoria for one of Moe's doctor appointments yesterday. We stopped at Costco on the way home and picked up a few things I needed. I was out of my "Silver Star" bread flour and getting low on yeast. I also picked up one of their rotisserie chickens. I made sure that there were lots of drippings in the bottom of the container.

I poured the drippings into the bottom of a cast iron skillet, added the chicken and warmed it up in the Cuisinart Steam Oven. While the chicken warmed up, the drippings browned and there was enough to make gravy.

I added a little butter, because there wasn't much fat. Made a roux, added chicken broth and season with some rubbed sage and black pepper.

I call this a "cheater" dinner.

Steamed buns with shredded tofu and eggplant in spicy five spice and hoisin sauce. Ginger quick pickles to be added.

Stir fried zucchini and egg in (mildly) sweet and sour chili sauce, with black vinegar, mandarin peel, sesame, coriander, Sichuan peppercorns.

The other night we had celery with dried shrimp salad, hot chili oil, pineapple chicken, Shanghai noodles with a commercial sambal paste with celery and rice.  I love pineapple chicken and this recipe from Serious Eats is not too sweet.

I missed my black eyed peas for the first of the year so tonight I 'll be having Hoppin' Jon in the Instant Pot.

looking for ward to that and to the fresh French Herb bread I made this afternoon.  

I didn't have enough dried blackeyed peas for the recipe but fortunately I had a can in the pantry...saved a last minute trip to the store.

 Crab cakes are about my favourite food in the world. Yours look sooo good.

I REALLY need to plan better and READ instructions.

Was think of sous vide ribs for supper, but that required +12 hours, and it was already 3 pm.😁

So, it was IP BBQ ribs instead. Used a no sugar low carb BBQ sauce with a tbsp of regular BBQ sauce to help make them "sticky"

Eaten with tofu, beets, and Shanghai Bok Choy.

Chinese New Year is Feb 5, but we couldn't resist the traditional sweet treats my brother dropped off...so OFF the low carb wagon tonight. My favourite is the Kumquat, and as you can see, there is only ONE left.

Tonight's dinner, Caramelized Chicken with Ginger (chicken velveted, then marinaded in sweet and regular soy sauce, rice wine, black pepper, minced shallots, and fish sauce), over rice with sliced scallions.

Had some pork roast leftover, so enchiladas it was (very spicy.....used poblanos from the garden....I might have put too many in lol)

Tonight's dinner: fried tilapia with fried-and-baked potato wedges on the side, accompanied by home-made tartar sauce with capers, tarragon,and hard boiled egg added.

Late to the game but I'm having fun now with sous vide!

My second attempt, with top sirloin steak.

Had picked up a roast and cut it into steaks. 2 pieces were around 8 oz and 1.5 inches thick. One was larger, probably close to 2 lbs and over 2.5 inches thick.

Put in at temp 135 for 2 hours. The larger one I kept in for 2.30 min. Next time, I'll be braver and reduce the time.

I sent the 2 smaller ones home with our son when he came to pick up his daughters.

I seared the bigger one in the cast iron grill. Eaten with green peppercorn sauce, spaghetti squash, and steamed green beans with a splash of Ponzu.

I was please at how tender and juicy the steak was!

My only proper and warm dinner in Al Hoceima. I was bed-bound sick the entire final week in Morocco. It's low season now and we were the only 2 tourists in town, and a big curiosity for the locals. Dinner was at a dingy local restaurant. It was full and dark, food was cheap and good. The people who ate there didn't look like they could afford anything more than this, in terms of cost. This meal for 2 costs 4,50 euros. I know I didn't get ripped off (common in Morocco) because I ordered from the very short menu on the wall with prices listed for each dish. Morocco does legumes and pulses well. I'm especially fond of chickpea dishes.

We both lost the most weight during this final week due to me being sick. Partner needed some meat and fat asap.

This was my cheapest meal in Busan, Korea. Also 4,50 euros (last year's exchange rate). Which one is "better"? I like both, just not every day.

Last weekend I decided to cure some pork ribs. After four days I took most of them out and smoked them to make the German “Kassler Rippchen”, albeit with some Manuka wood dust.

Originally the ribs were intended to flavour a huge pot of Kale for a “Grünkohl” feast, but I was unable to source sufficient kale - seems that the local shops sell this overpriced, yet in minuscule quantities aimed to be eaten raw by health conscious yoga moms with challenged gastrointestinal systems (sorry for the rant).

I switched to using them in pot of beans, which I prepared yesterday and had today with homemade Döner and garlic yoghurt. Probably  one of the tastiest pots of beans I have ever made... very happy!

Family decided not to try beans & Döner, so I whipped together an emergency dough pizza with salami, olives and some of the rib meat from the bean pot (hahaha, they will never know ...).

I don't know what this is. Well, I know what's in it and how it was cooked, because I cooked it, but I don't know what you would call it.

It's a sort of pork ragu, but with Chinese running through it.  I made a standard tomato sauce from fresh tomatoes and onions. Browned off roughly chopped pork and added it to the sauce. Deglazed the pork pan with Shaoxing wine and added that to the plot. Threw in a star anise and chopped chillies. Then cooked it for an hour. Chinese ragu?

Finished with Chinese chives and served with rice.

Were the potatoes baked, then fried or did you have both?

Did a corned beef in the slow cooker yesterday. Also tried a new recipe called "melting potatoes".  OH they were so good.  Crispy on the outside, creamy and, well, melty on the inside.  Will definitely make these again.
