Suggestions re Japanese noodles?

There is a recipe for soba  noodles In the book Takashi’s Noodles. And the Cooking with Dog series on YouTube has a recipe for udon noodles.  I am also pretty sure there is a recipe kicking around for making Ramen or for using an alkali to improve the texture of a the noodles to make them resemble Ramen.   Cannot remember off the top of my head.

I have the hard copy edition of this great book although it’s not the most up-to-date one. But I was thrilled to find another book that he had written which I was unaware of until now:  Practical Japanese Cooking. 

 Unfortunately neither are available in Kindle editions but I have added the second one to my wish list. Thanks.

I picked up a nicely priced copy of the old version of Japanese Cooking, and leafing through it gave me the distinct feeling I need to read the whole thing closely, rather than my usual browse for a likely recipe and get cooking.  MFK Fisher's fault - the lyrical intro sucked me right in.

Reddit has a sub forum https://old.reddit.com/r/ramen/ that I've found very helpful. Ramen_Lord has numerous recipes there, and goes into making noodles with a lot of detail. I use his recipe for making Sapporo style noodles and we're very happy with the results.

As I recall, the new edition was not changed from the original - the new preface says the original text is still valid and didn't need updating.

Yes I think the only changes were prefaces and possibly photographs added.  I do not believe the original text was revised in anyway.
