@kayb Thankfully, onions cooking is something that will draw Moe into the kitchen every time.   Love the smell of onions frying. 

I'm going to try your crockpot method.

I vividly remember, as a child, my father saying something along the lines of "the smell of frying onions would make the dead hungry". I thought he was barking mad.

He passed away ten years ago, and frying onions hasn't revived him so far, but I've come to see the wisdom in his thinking. Just yesterday, I was walking home after lunch with friends, smelled my neighbour's onions frying and felt ravenous all over again!

After moving to Florida last year we discovered that an edible corn muffin is a rare and elusive thing, well actually it has taken 15 months to find one. Of course it turns out to be at the diner right around the corner, we had gone there for dinner once last year but it wasn't very good so never went back. I heard recently that they serve the original Jersey breakfast of Taylor's pork roll, egg, and cheese which was excellent....and discovered the plate of corn muffins, also excellent

 

Take out muffins buttered and griddled 

 

 

oh, and I don't just make them because I bought a house with no oven, someday....

 Between the conception and the execution something went terribly wrong. :D  

 

The idea was quite simple.  Take the leftover mashed potatoes with caramelized onions from yesterday, add some grated cheese and some green onions and make some potato pancakes. Of course to hold together such a mixture one needs some flour or something.  But I was feeling quite cavalier and proceeded without any regard for silly rules.  Naturally, my carefully formed potato pancakes melded together into a potato lake.  Still tasty  when topped with some seared cocktail tomatoes.

This specimen cost about $160 and is from Spain. Very pungent too.

Breakfast for us was a French omelette (3 eggs, salt, black pepper, 1 tbsp. water cooked in melted unsalted butter) served with a generous shaving of black truffles on top.

next time Ill spindle a little of Penzey's Bratwurst seasoning on the potato pre-Micro.

May be plain, but it inspired me to make a Baked Potato with Butter, Cheese, Salt and Pepper for breakfast this morning!

I love baked potatoes with various toppings as above.  Nice job.  We were skiing many years ago and the chalet restaurant served Hugh baked potatoes with various toppings like Chili, pulled pork, bbq chicken, all topped with melted cheese and sour cream, bacon etc, etc.  They were delicious.

 

i was reading James Beard’s basic cooking book where he said always serve baked potatoes freshly baked out of the oven because if they are allowed to sit they get ‘heavy’ rather than fluffy.  I did not know that and will try that tonight.

A poached or fried egg on a leftover baked potato with cheese and bacon is one of my favorite breakfasts. Sometimes I'll just bake a couple of small potatoes -- tennis ball sized -- and flatten them with a potato masher, brush the top with butter, sprinkle with salt, pepper, cheese and bacon, broil it, and then top with an egg. Tough to beat.

Jachnun, haminados eggs and spicy-sweet minty tomato sauce. 

 

While not the most photogenic food item out there, if you never had a good jachnun, with soft buttery layers and butterscotch aroma from a night-long bake, you are missing out :P

The eggs are also baked all night. 

The sauce is made of raw grated tomates, mint, spicy red schug and a touch of sugar.

Dinner last night was fish and chips. I know from experience that fish and chips for the two of us requires 3/4 LB of fish fillet. I bought a 1 pounder with this sandwich in mind, and chose to have it for breakfast to get the cooking oils packed up and put away. My version of MCD's Fillet-O-Fish.

All the potato talk in this thread got me wanting some.  That and a condiment overload in my fridge yielded this mess:

I boiled a few small potatoes, smashed them and crisped them up in chicken fat, topped with a dollop of the whipped ricotta from Six Seasons (homemade ricotta whipped with salt, pepper and olive oil), soft-boiled eggs and some carrot-top salsa verde leftover from another Six Seasons recipe.

Boiled small potatoes, smashed, drizzled with olive oil and crisped in the CSO.  Topped with ricotta, leftover wilted kale (from Six Seasons) and a soft boiled egg.  This was pretty good without the egg, but it's breakfast and all xD

 

There was also this small amuse bouche to amuse moi while the egg was boiling:

A little two-bite potato, treated as above but topped with a dab of pimento cheese and returned to the warm oven to melt.  Could have just eaten more of these for breakfast!
