I was looking for an eggplant ravioli recipe and came across this - https://stefangourmet.com/2013/01/20/ravioli-with-eggplant-and-ricotta-ravioli-di-melanzane-e-ricotta/  I had a red sauce with fresh longaniza on hand which I used for the dish.  It is really a good recipe and could easily turn into a favorite. In the background are a couple  of loaves of overnight white bread from FWSY.

I baked an apple pie this morning before leaving for work.

And it became dinner tonight.  

 

I asked Moe what he wanted for dinner and his response was apple pie.  

 

He apparently had been thinking about it all day.  So that made things easy.

So...…  not feeling like eating much last night had a small salad of smacked cucumbers, some Japanese potato salad I had made for John to try and Ro-tel and Velveeta dip with some corn chips.😶

I would love to have regular access to fish the way you do! Somehow, I suspect those smaller fish make for just the right ratio of crispy coating to tender fish flesh. Yours looks wonderful.

@suzilightning, I haven't had that in years. I was introduced to it by a Memphis native many years ago and I know if I made it today even in all of its trashiness (in the best way possible) I'd eat WAY too much. Of course I could say I'm eating it in honor of my friend Randall and enjoy the memories.

I made I only half of the recipe and have a bit left.  I was thinking about cooking up some elbow macaroni and using the remainder to make a mac and cheese.  I even have a bit of a ham steak left so may dice it up and fold it in.  All I need then are some smashed up butter crackers to go on top.  😄

 

Oh, @Ann_T!!  That is a magnificent pie.  I covet it and would happily have it for breakfast with some really sharp cheddar cheese.

Visited some friends over the weekend and they cooked us some gorgeous steaks.

I have no pic after they were cooked because we fell upon them like the Visigoths on Rome. He made the best sauce for them, though...olive oil,  garlic, wine vinegar, lemon pepper, not sure what all else. It was to die for.

 

We had baked sweet potatoes and a salad and copious quantities of wine with it, with the result I could not stay up to watch the Memphis Tigers beat Yale in 2 OTs.

Last night was something super trashy that I've made since we were broke newlyweds - tamale pie:

Just canned tamales, shredded Cheddar and Hormel chili with beans.  I grew up eating canned tamales and saltines, but I don't believe Mr. Kim had ever seen tamales before.  So, when I set a bowl of them down in front of him at the table one night, I blew his mind.  I came up with this combination that he was more comfortable with and it is still a favorite with us.  Served with cornbread:

Hearty beef stew last night. 1 hour in the Ipot, added carrots, potatoes and frozen peas and cooked for 20 minutes more. Kept warm for 20 minutes until dinner time. I was going to add Red Lobster Rosemary and Garlic biscuits, but decided not to at the last minute. We did just fine without them.

Fried chicken, taters and frozen corn from our garden.

We've tried semi-hard to eat from the freezer in order to make more room for deer season which is rapidly approaching.  Unearthed a package of backstrap venison steaks so Ronnie threw 'em on the grill last night.
