Dinner 2018

I cannot express how greatly I  enjoyed this $9 Aldi ham, that has provided dinners, breakfasts and lunches for more than a week. Perhaps one of the best things was dinner tonight, pea soup with copious amounts of ham from the ham bone with a few carrots and a fresh batch of Cheddar Bay Biscuits. Another plus is the fact that Deb wants it for lunch tomorrow!

I made dinner again yesterday morning because I didn't make it the night before.

Prime Rib bones prepared like regular short ribs.

Cooked in the Breville PC and served with mashed potatoes and maple syrup glazed carrots (for Moe only)

I googled what zapienaki is, but what is the sauce on top of yours?  From what I read the most popular topping is ketchup.  It sounds like it would be delicious with no sauce at all...

Made some pasta for Cacio e Pepe. Realized at the very end that I made a full amount of sauce for only half the amount of pasta. Still tasted fantastic and will definitely be doing this again and again, but it resulted in probably too heavy of a sauce for this pasta dish. Therefore, you could argue the presentation isn’t quite right. Easy to cut in half for next time.

I continue to be astounded and highly pleased with the quality of Aldi's ham. Got one in the freezer right now, in fact.

 

Must learn how to make pea soup. My one effort at it was a dismal failure. But damn, it makes white beans tasty!

This time I soaked 1 lb. of split peas for a few hours in the morning, rinsed them and cooked them at high pressure in the IP for 70 minutes with about twice their volume of water. I let it cool down,  made sure it was smooth and added the ham bone (this was a half a butt ham on which I had left quite a bit of meat), let it cool down again, removed the bones and cut up the ham and seasoned the soup with a little hot sauce, garlic and pepper. We were both quite happy with it.

Last night was Fricasseed Chicken finished with biscuit dumplings.  I would describe the cake as a thick cake like crust with a thin cheese cake pie topping, both using pineapple juice as the liquid, then after baking, topped with some pineapple and cherry.

That looks absolutely delicious and dreamy.  Exactly what I'd like to be eating tonight.  I really need to get out my pasta machine that I asked for and received about 6 years ago and have never used. 😏

 

@kayb - not sure if you mean green pea or split pea soup, but if you mean split pea here is a really good, easy and quick recipe that Mr. Kim made one time when I was not feeling well.  It made me happy and has been our go-to split pea soup since.  I'm sure that your Aldi ham will fit in just fine.
