Stunned at all of these!  They are gorgeous AND they sound delicious.  I am in awe of your piping skills (especially the St. Honore).

I don't make a lot of pastries, but this was really good.  Somewhat similar to a pecan pie.  This is a Walnut Tart with Candied Walnuts as the garnish.

I made a walnut caramel tart some years ago. Very rich, very good...a little went a long, long way. @David Ross, your photo makes me think I should try that again.

Walnuts in pastry is what I grew up with. I do not dislike them but not my favorite nut. The year my single but shops like for a family of 5 friend overbought various nuts at Costco and brought them over - my baklava was so so good. I think it was pecans and hazelnuts + walnuts.

I too grew up with walnuts. They were all around us! I now find them to carry a bitter element that I don't remember from my childhood years. I suspect it's my taste buds rather than the crop. Toasting them seems to help develop the sweetness that I remember. Pecans and almonds have that sweetness without any help.

I have frequently found the best use for walnuts to be in muffins, preferably with dates. Or in banana bread. For cookies and salads, I prefer pecans.

which  is a bit OT for this thread :

 

If its good w Walnuts

 

its going to be better w Pecans.

 

a bigger issue is :

 

Are your Wal's and Pec's

 

fresh 

 

they oxidize quickly 

 

and many have not tasted

 

fresh , from the current season.

 

how do I know ?

 

my sister used to live in Central TX

 

an hour N of Austin.  all the small towns used

 

pecan trees as shade in the centra areas

 

people would come by in the Pecan season and pick them off

 

the ground.

 

she had a friend that cultivated Pecans

 

there are several varieties 

 

she used to send me in the fall

 

a lot from this grower.

 

Night became Day.

 

still in the shell

 

TJ's

 

for me , has much fresher nuts than any 

 

other place locally 

 

and Pecan prices went up years ago

 

I know this from the grower via my sister

 

as the Market in China

 

'' developed a taste "

 

good for the grower !

I have a huge backlog of pictures to share, so I'll start with one from the winter months -  germknödel.

This is enriched yeast dough filled with plum preserves lightly flavored with cloves, cinnamon and nutmeg.

The buns are boiled, or as I did, steamed, then topped with vanilla flavored creme anglaise and poppy seeds toasted in butter.

Served with brandy. This was a great cold weather dessert.

It is. We give them to family and friends, neighboring kids, eat quiet a lot, and still end up with freezer full of them. They make very good smoothies and quite decent crumbles.

French toast with vanilla, cinnamon, a bit of anise, some rum, brown sugar. Dulce de leche with a bit of salt, toasted coconut flakes, rum soaked raisins.

If you are not a french toast lover, it will also work well on pancakes.

I need no excuse to want to eat french toast - custards are among my favorite desserts and french toast being one of my favorites. And while I enjoy variations, like this one, my favorite will always be the classic with vanilla, maple and a hint of cinnamon.
