PBS has a three part series on Food : delicious science

 

you might bed able to see at least two of them here :

there is a third one , but its name doesn't come up with this series

 

In the one Ive seen , tomatoes were buzzed up , ultra centrifuged , and tasted

 

I dont recall what Modernist Cuisine said about this

 

but here the clear supernate was reduced and was ultra-Umami w no tomato taste

 

having not ultra-C now , I can't add to this which is a surprise

 

I did have easy access to one back then ...........
