Challenge: Cook your way through your freezer (part 1)

Most of the family has left, just daughter and s-i-l here - much quieter!

I had taken out beef tenderloin and made Cantonese Chow Mein for the kids who were leaving after lunch. Cauliflower, broccoli, carrot stir-fry accompanied.

For the evening, the four of us enjoyed Beef Fajitas with Bell peppers, guacamole, and other fixings.

No pics : (   but used some leftover mojo chicken from last night, shredded and cooked to dry a little.  Then wrapped in toasted corn tortillas with shredded lettuce, cilantro, diced tomatoes, grilled onions and sliced avocado.  Heat came from a little ground morita  and guajillo peppers.  They were tasty!

Boneless Lamb shoulder, marinated in tri-colour peppercorn, fresh mint, rosemary, garlic, raspberry vinegar, burgundy. Then it was coated with Dijon mustard, more freshly ground pepper roasted for 1 1/2 hours... a little too long as I was too busy visiting with daughter and s-i-l.

Eaten with grilled zucchini, Leeks, pecan toasted with Worchestershire sauce, radishes then tossed in lemon juice, olive oil, Italian parsley, and same peppercorns. We also had mashed cauliflower, a portion with leftover black garlic butter, and a portion with just butter and roasted garlic granules.

And I just had to post these T-shirts my daughter picked up: She DOES have a Great Pyrenees, and she thought the saying on my T-shirt was definitely mexD

The one on the right came up in my GF's facebook feed the other day, and she swore she'd get it for me. I'm the kid who read his encyclopedia cover to cover because nobody thought it necessary to tell me that wasn't how most people use one. :P

Last night I took chicken enchiladas that I had made using some of the Christmas capon, but nothing that started with a c went with it.

 

Tonight I thawed some Chicken thighs that were frozen May 27 last year.  I made the same dish as one last month - Japanese Chicken Curry with Carrots served over rice.  Love that stuff.

Me too. Fifth grade. Most books we'd ever had in the house at one time. I started with Vol. A in the World Book, and read it through.

 

I read enough that when Amazon was handing out refunds due to the class action lawsuit on price fixing a year or so ago, mine was $300-plus. That's what bought my CSO.

Got home at 9 pm tonight after a two day trip out of town. Cold, tired and hungry. This wasn't really cooking from the freezer. Everything was cooked before it saw the freezer. 

A bag of lamb curry with chickpeas and coriander leaf/cilantro was duly defrosted and heated in the nuclear thing recently purchased for just such an occasion. As was some leftover rice which I had remembered to freeze. 

 

No picture because it didn't look at all appealing, but it tasted OK and filled the large hole where my stomach used to be.

Back to cooking tomorrow.

That's one of the classic, fundamental use-cases for the aforementioned device. :)

Understood. I'm fairly confident the microwave burrito/mac & cheese demographic is under-represented in this particular community.

I cook my breakfasts and dinners from scratch save the occasional box of Kraft Mac and Cheese*, which normally gets dolled up a bit anyway. Lunches, however, are more about convenience and microwave burritos are a staple. -_-

 

*This taste is comfort food for me.

Never underestimate our ability to enjoy junk food. We might not choose to live on it but most of us will 'fess up to at least one junk food vice.

I pulled out some beef sausage today and made Tunisian beef sausage ragu. Served over pasta.  It had 2 Tomatoes in it that also came out of the freezer.  I made a double batch of the sauce so the other half is in the freezer.

 Trying to win back a few points.   Today I used the minced lamb from the freezer and the small bag of canned tomatoes which I had stashed in there to make a meatball curry which I am documenting in the meatball cook off thread.  Of course much will be returned to the freezer for future meals so I probably lose as many points as I gain.  :sad:

Chicken mole chili. Leftover cooked chicken, chicken stock, cocoa powder, and dried chile ancho (rehydrated in the stock, then pureed). Black beans, some leftover cooked squash also from the freezer. Sauteed red bell pepper and onion. I actually have an almost empty section of the freezer drawer, I like this.

Today I pulled out a Cornish hen and I roasted it and ate it with some carrot purée and a cucumber salad.   I also took out sausage from the freezer to make a sausage and apple stuffing for the hen. ( I took the hen out with a view to deboning it and then stuffing it but its skin was already badly torn and I didn't think it was the right bird to attempt my first debone.)
