So Chocolot, Alleguede and I have come to San Francisco to attend and show off the EZtemper to the Fine Chocolate Industry Association's Winter Elevate Chocolate Event, then attend the Fancy Food Show on Sunday before heading home on Monday.

Here's what they fed us on the plane - a calzone.

 

With two recommendations from eG types - and within walking distance we chose to go to John's Grill after we got off the plane.

Started the morning at Guittard - had a tour of the factory by a friend of Chocolot's. Came out smelling like chocolate.

Next Dandelion Chocolates - bean to bar. Had fun watching the production - had an interesting time this evening talking to the owner about issues.

Next door to Dandelion is Craftsman and Wolves - checked out a Kouign amann, a 'morning bun' which should have been a 'mourning bun', croissant and baguette.

A visit was made to Emporio Rulli - Alleguede, Chocolot and I had met the owner at our panning course in Las Vegas in 2014 - so we decided to drop around and see his facility. Quite something - he makes 10,000 panettone for November and December. This year he made some panettone that he baked in jars.

Things brought home in our travels today - a big bag of bars given to us by Mark at Guittard. Chocolot talked him into giving her a few pounds of product for testing purposes. I got a couple of bottles of Red Boat fish sauce and three bags of Rancho Gordo beans - black turtle, Corona and Christmas Limas.

Alleguede and I headed back to the Ferry building this morning for the market.

Stopped and had a good look at the chickens and porchetta dripping on potatoes roasting under them.

Market was a little wet this morning - all the citrus was very tempting particularly the white grapefruit - wanted to make cocktails. Bought some dried peaches and persimmons.

Ubered on back to the hotel to pick up Chocolot and headed to Chinatown for lunch. Thanks to all for their suggestions - we were able to check eG and figure out which dim sum place to hit for lunch. Great Eastern was the choice.

Those look like chee cheong fan (mince wrapped in rice noodles). Glad you liked Great Eastern!

"Chee Cheong Fun" (literally, "pig intestine (rice) noodle")** more accurately refers to rolled tubes of this slippery-texture rice noodle sheets, with or without dried shrimp (har mai) or chopped scallions and maybe some other bits incorporated into the rice sheets, commonly served with a sort of special sauce (a sweetish-savory sauce) and with or without a hot chilli sauce as well. The dim-sum article like the one pictured are usually referred to as "xx cheong fun" where xx refers to the filling that the rice sheets enclose.  I took a close look at the photo and I think I see shrimp as well as mince in the filling plus some greenery and some other things – I am guessing that Kerry Beal & Co. ordered item #55 from their menu, the "Rice Noodle Roll Stuffed w/ Shrimp, Beef, B.B.Q. Pork" ?  These are more commonly called "rice crepes" on English dim sum menus in my experience; they are also less frequently offered with a combination of all the three fillings; more usually they are offered as crepes with just one of the three -  i.e. with either a shrimp, or beef mince, or B.B.Q. pork (a.k.a. "char siu") filling.  The Great Eastern menu does show a shrimp-only rice roll/rice crepe, item #54.

 

** Because they "look" like the large intestines of a pig (BY FAR the most common non-poultry animal slaughtered for meat in Chinese cuisine)

And I took a little break from the FFS to go outside and renew my friendship face to face with Alanamoana - with whom I shared a room and a course with JP Wybauw back in 2007 or 8.

Delta - business class - so that we had the extra luggage and extra weight. It may have been a meal - but nothing to write home about. Certainly not like business class on any other airline!
