Papaya v. Mexican Papaya v. Mexican Cooking papaya

I think many of us are used to seeing the Hawaiian papayas which are more "personal sized" with a softish golden skin color. The Mexican ones are larger and more green. As to "cooking papaya" - yes I think the ripeness factor is the difference. Melissa's Produce has a good explanation here http://www.melissas.com/Papaya-p/1282.htm
