[Modernist Cuisine] Beer Can Chicken (2•109)

One of the first recipes I'm going to try is the low temp oven beer can chicken. There is no mention of brining the bird first. Thoughts? Thanks in advance.

Most of the steps in this recipe are redirected to the version done with combi oven. From the text it seems that the brining step is not done on the convection oven version, but I think it should be done. I've done it once without the brining and I thing the brining may help, and other people in forums have followed all the steps, including brining, also for the convection oven version.

I tried the convection oven version and it wasn't a success. Be careful with the high temperature finishing step because you may have smoke and fire alarms before the cooking is finished...
