So I've got some regular thickness pork chops, but I think I will on-purpose thin them. Maybe Hong Kong pork chop rice.

I'm rather partial to the bread crumb-and-deep fried variety of thin pork chops. I can go for a good tonkatsu (panko crust) or pork schnitzel anytime!
