Baked Potatoes

I tried this last week and we thought the potatoes were the best we’ve ever made. Be sure to dock the potatoes before brining.

Last night I tried a 5 minute microwave with a 30 minute bake at 400F.  The insides seemed the same as before (nice) but the skin was less hard and easier to cut.  So far this is the winner.

I would like to do more experiments, but first I must find somebody who is shopping and can grab me some reasonably sized potatoes!  The monsters I get when I order online are just not suitable.

My method is as follows:

Scrub

Dry

Poke

Rub with bacon fat

Sprinkle with coarse salt

Wrap in heavy duty foil

Bake for an hour at 425F

 

I make extra to dice and fry with eggs for breakfast the next day.
