Burgers - mimicking a seasoned grill?

Being both a burger-lover and a hopeful-future food business owner, I'm curious not only how to get a properly seasoned grill over time, but also how to mimic one in the meantime. Frying up a bunch of onions before making burgers maybe? Not sure, but looking forward to ideas!

Yes, bacon fat with onions is often the seasoning before I cook with cast iron... So, in a business setting, fry up a bunch of bacon first thing, then cook onions in it, then burgers?

And, how do you clean the grill without stripping it of the seasoning?
