Dinner! 2005

Thanks all, yes the dinner was excellent and a blast to do.

tonight we had the leftover beans with some ribs. My butcher said he likes to do ribs in the oven. 300F for 2 to 3 hours. Take a jar of bbq sauce and pour it in a roasting dish, fill the jar with water and pour that in too. add the ribs and cook. turn half way through and baste. so thats what I did, they were good and easy. Beer!

Tonight's repast.

gallery_7409_476_52642.jpg

Buffalo Short Rib Stew. I had two packets of frozen Buffalo Short Ribs from the DDC trip to Hillside Farms in Telford, PA several weeks ago. This afternoon, I dusted them with seasoned flour and browned them and then tossed them into the trusty Crock Pot. Sauteed up some onion, chopped celery, chopped parsnips, some baby carrots and some sliced mushrooms and threw that in on top. Deglazed the pan with a decent spill of leftover red wine and added about two Tablespoons of fresh thyme, a Tablespoon of Dijon mustard and the last of the Worcestershire sauce I had. Put the pot on Auto and walked away. This evening I fished out the bones and chopped up the meat that hadn't disintegrated yet and added a flour and water slurry and a bit of tempered sour cream to make it a bit like Stroganoff. Let it boil for another ten minutes or so and then turned it off. Served it on top of buttered egg tagliatelle. Delicious payoff for minimal effort.

I don't know if there's a better thread for this one, like a gallery of regrettable foods or a hall of shame, but oh boy, I just had to share this one... It's so bad, I'm feeling ill just looking at the picture. I'm a freakin' snuff food pornographer.

It's a grilled, Middle Eastern Lamb, with couscous and some mint-cucumber-yogurt-tumeric relish. I always like to use cuts with bone, for grilling, but this lamb chop turned out to be horrible. Some kinda shoulder cut or whatnot. I didnt' even have the good sense to cut off that dingly bit with the rib-like bones in it. And obviously, I made no thoughts as to presentation until the last moment -- the colors are just unnervingly bad. If I'd thought about it, and at least gotten some tomatoes, it wouldn't look quite so horrible.

last night we had roast chicken, potatoes and cabbage and leek.

traditional, but it has to be around here, my sister is a picky eater, lol

Spam in my pantry at home.

Think of expiration, better read the label now.

Spam breakfast, dinner or lunch.

Think about how it's been pre-cooked, wonder if I'll just eat it cold.

yeah, we should have one of those!

when I first looked at your pic without reading the description, I thought it was a very weird looking stuffed aubergine

So, it not only looked bad, it tasted bad too? did you eat it anyway?

edited to add: I looked at the pic again and it's sort of growing on me. I also think the mint-joghurt tumeric thing looks good!

Yum, yum, yum! Sounds delicious and so comforting. Perfect for fall!

Aubergine with mushroom stuffing, bulgur pilaf with spicy (very spicy) fresh chorizo. The aubergine was stuffed with the mushroom filling I had left over from making ravioli on Saturday. I was very pleased with myself for being so creative with my leftovers

Sunday dinner, bbq'd buffalo ribeyes (medium rare - of course), marinated for 24 hours in garlic, EVOO, chili flakes, salt, peper, lemon zest and lemon juice. To accompany peaches and cream corn on the cob, and bbq roasted banana potatoes tossed in EVOO with whole garlic cloves, sliced purple onion, and button mushrooms.

Great bbq dinner with very little clean up required.

Tonight... Bon Ton meat pies (name brand for those in Calgary, AB) and a simple side salad heavy on the good tomotoes and feta.

Quiet night tonight...decided to have some toasted leftover boule (had it in the freezer from when I had my friend Lisa over a couple of weeks ago) topped with a little unsalted butter and some blueberry preserves (my favorite!). To go with it, an orange. My Chinese delivery place includes them with every order, but I never have room for them after those dinners! Otherwise, I really only eat the oranges my grandmother sends me from Florida every winter. Yum.

On my own tonight, so no cooking. Trinidadian Double (take-away, not home cooked) with a green salad followed by a couple sugar pears. Easy and delish.

We all take hit now and then. You should really use that pic to start a separate thread....If you make it they will post. It will be great for a laugh. I'm destined to join you. Some of my "new dishes" go wrong, in a big way, as well.

I made meatloaf for the (now wife) once it was a slurry like affair. I never touched the dam stuff again. No matter how long I cooked it, it never lost its horrid consistentcy.

She makes a fine meatloaf (I let her cook once every year or so) so we compliment each other.

Your lastest attempt at salmon wellington has come very far since your first try.

I look for to you sucesses as well as the one that are no so much....It makes me feel comfortable posting here.

I haven't posted here in a long time.....

I am such a bad photographer and my meals always pale in comparison.

Last night I made ikura-don, I even made the soy sauce seasoned ikura (salmon roe) myself from a sac of fresh eggs. The shiso (perilla) garnish was growing wild in my backyard.

Tonight was mustard/soy braised chicken wings, falling from the bone as you lifted them; onion/yellow pepper/sesame fried rice; corn and vidalia salad with a vinegar/sugar dressing; sliced tomatoes.

Dessert was a scoop of a new Edy's flavor: Double vanilla. Tastes just like the Southern boiled custard we used to make early Sunday mornings and chill for turning in the old crank ice cream freezer on a lazy Sunday afternoon.

Ugh... I would have been all over that last night. When my husband got home I actually warned him. "This may be the worst meal that you will ever consume in this house."

Shrimp fajitas. Oh, they were bad. The beans were worse. I'm so ashamed. The only part that turned out ok was the guacamole and that was really just because the acocados that I picked up were some of the best that I've ever gotten around here.

So... I ate rice, guacamole, and salsa fajitas. They were pretty good.

Okay, I've done it -- a hall of shame, or a diary of regrettable foods. Of course, I'll still post my culinary efforts in this thread (hopefully, most of them), but I'll reserve the true disasters for the thread below. And hopefully, I'll be in good company.

Dinner! (What WHERE you thinking?)

Sunday night we had Pork Pot Roast with Apricots, Cardamom and Ginger (recipe courtesy Molly Stevens) over couscous with an orange gremolata to brighten the flavours, and a mixed leaf salad.

Last night we had salmon en papillote (with julienne of carrot and fennel, and sliced green onions), roasted potatoes, broccoli with an orange/soya glaze and toasted almonds, and a tomato basil salad.

Sorry, no food porn here; just some good eats. I made a roasted chicken last night.

(By the way, this my first "whats for dinner" post, and hopefully, the first of many to come).

Brining the chicken in water, soy, ginger, lemon, onion, garlic and dried herbs

IMG_1061.jpg

Preparing for skewering (note the poor trussing skills). I forced garlic slivers between the skin and the meat.

Halfway through cooking:

Another tuna loin from DRColby was poached in EVOO with rosemary and lemon zest. Served with white beans, rosemary and bacon

gallery_16100_231_296759.jpg

Wendy that tuna dish looks positively luscious  I love white beans with bacon.. I never would have thought of adding tuna to it.. but seeing it in your picture it makes total sense.

For how long was the tuna cooked? was it cooked through? would this also work with a grilled tuna steak you think?
