Ingredient help for reverse spherification recipe

I am trying to make a reverse spherification using a recipe (http://www.molecularmixology.co.uk/forum/viewtopic.php?f=7&t=26) that utilizes calcium lactate. I don't have calcium lactate but I do have Texturas Gluco (calcium gluconate and calcium lactate). Can I substitute the Gluco for the calcium lactate? What ratio should I use?

Thank you!

You should be able to substitute 1 for the other, I've no idea of an official conversion but each molecue of lactate and gluconate has 2Ca+ Ions.

The molar mass of Calcium Lactate is 218 and Calcium Gluconate it's 430 so I'd try double the quantity of gluconate as a replacement for the lactate.

Good luck.
